3 garlic cloves, unpeeled
1 jalapeño chile, stemmed
2 tablespoons olive oil
Salt and freshly ground black pepper

Steps:

  • 1 Preheat the oven to 375°F.
  • 2 Put the tomatillos, 2 of the apples, the onion, garlic, and jalapeño chile on a rimmed baking sheet. Toss with the olive oil and season with salt and pepper. Roast until tomatillos are softened and slightly charred, about 20 minutes.
  • 3 Peel the garlic, then transfer all of the ingredients to a blender and puree until smooth. Season with salt and pepper.
  • 4 Chop the remaining apple into 1/4-inch cubes and stir into the salsa before serving.

Tips:

  • Choose the right tomatillos: Look for tomatillos that are firm, plump, and have a deep green color. Avoid tomatillos that are bruised or have blemishes.
  • Roast the tomatillos and apples: Roasting the tomatillos and apples intensifies their flavor and gives the salsa a smoky, caramelized taste. Be sure to roast the tomatillos and apples until they are slightly charred and tender.
  • Use fresh herbs: Fresh herbs, such as cilantro and mint, add a bright, refreshing flavor to the salsa. Be sure to chop the herbs finely before adding them to the salsa.
  • Adjust the spiciness: The spiciness of the salsa can be adjusted by adding more or less jalapeño peppers. If you want a milder salsa, remove the seeds from the jalapeño peppers before chopping them.
  • Serve immediately: Roasted tomatillo and apple salsa is best served immediately after it is made. However, it can also be stored in the refrigerator for up to 3 days.
