MISO SOUP WITH TOFU AND BABY SPINACH

Miso Soup With Tofu and Baby Spinach image

I normally use fresh shiitake for this, as this is a more delicate soup, but if you really wanted a meaty texture you could use rehydrated dried shiitake, as they are far chewier, just be sure to remove the stems.

MUSHROOM MEDLEY WITH SPINACH, GINGER AND SOY

Mushroom Medley with Spinach, Ginger and Soy image

Categories     Ginger     Mushroom     Vegetable     Side     Sauté     Low Fat     Vegetarian     Quick & Easy     High Fiber     Spinach     Healthy     Vegan     Soy Sauce     Bon Appétit     Pescatarian     Dairy Free     Peanut Free     Tree Nut Free     No Sugar Added     Kosher

Yield Serves 4

Number Of Ingredients 11

2 teaspoons oriental sesame oil
1 red bell pepper, cut into strips
2 tablespoons minced fresh ginger
1 1/2 tablespoons minced garlic
8 ounces shiitake mushrooms, stems trimmed, caps sliced
8 ounces button mushrooms, sliced
4 ounces small oyster mushrooms
1 10-ounce package ready-to-use spinach leaves, stems trimmed
6 green onions, cut into thin strips
1 tablespoon soy sauce
Lemon wedges

Steps:

  • Heat oil in large nonstick skillet over medium-high heat. Add bell pepper, ginger and garlic and sauté 1 minute. Add all mushrooms and sauté until brown and tender, adding 2 to 3 tablespoons water if mixture is dry, about 10 minutes. Add spinach and green onions and stir until spinach wilts, about 2 minutes. Stir in soy sauce. Season to taste with salt and pepper. Transfer to bowl. Serve, passing lemon wedges to squeeze over.

Tips:

  • Use extra firm tofu: This type of tofu holds its shape better when roasted and absorbs the marinade more easily.
  • Press the tofu before cooking: This helps to remove excess water and results in a firmer, more flavorful tofu.
  • Marinate the tofu for at least 30 minutes: This allows the tofu to absorb the flavors of the marinade.
  • Use a variety of vegetables: This recipe calls for mushrooms and baby spinach, but you can also use other vegetables such as broccoli, carrots, or bell peppers.
  • Don't overcrowd the pan: When roasting the tofu and vegetables, make sure to spread them out in a single layer so that they cook evenly.
  • Roast the tofu until it is golden brown and crispy: This will take about 20 minutes.
  • Serve the tofu immediately: Roasted tofu is best served hot and fresh.

Conclusion:

This roasted tofu with mushrooms, soy ginger, and baby spinach is a delicious and healthy meal that is perfect for a weeknight dinner. The tofu is crispy and flavorful, the vegetables are tender and flavorful, and the soy ginger sauce is the perfect finishing touch. This recipe is sure to please everyone at the table.
