Time 1h40m

Number Of Ingredients 3

1 ½kg floury potatoes (such as Maris Piper, King Edward or Desirée), peeled and cut into halves or quarters, depending on size
100ml olive oil
2 tsp smoked paprika

Steps:

  • Heat oven to 200C/180C fan/gas 6. Add the potatoes to a pan of cold salted water, bring to a boil, then simmer for 5 mins until partly tender. Drain and steam dry for a few mins in a colander.
  • Return the potatoes to the saucepan, and add the oil, paprika and plenty of salt and pepper. Cover with a lid, then shake the pan around to roughen the edges of the potatoes and thoroughly coat them in the paprika and oil. Tip the potatoes into a large roasting tin, making sure they are evenly spaced apart. Scrape in all the fluffy potato mess - these make the best crispy bits!
  • Roast the potatoes for 1 hr 15 mins, turning halfway, until extremely fluffy and crisp.

Yield Makes 8 servings

Number Of Ingredients 7

3 pounds sweet potatoes
1/2 stick (1/4 cup) unsalted butter, cut into 1/2-inch cubes and softened
1/3 cup heavy cream
1/4 teaspoon sweet or hot smoked paprika*
1/4 teaspoon salt, or to taste
1/8 teaspoon cayenne, or to taste
*Available at kalustyans.com

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Prick each potato once with a fork, then bake potatoes in a foil-lined shallow baking pan until tender, about 1 hour. When cool enough to handle, peel, then cut away any eyes or dark spots. Purée potatoes with butter, cream, paprika, salt, and cayenne in a food processor until smooth.

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes that are about the same size so they cook evenly. Freshly harvested sweet potatoes with no signs of sprouting or shriveling are ideal.
  • Cut the sweet potatoes evenly: Cut the sweet potatoes into uniform-sized pieces so they cook evenly. If the pieces are too small, they will overcook and become mushy.
  • Don't overcrowd the pan: When roasting the sweet potatoes, make sure to spread them out in a single layer on the baking sheet. Overcrowding the pan will prevent the sweet potatoes from roasting evenly.
  • Roast the sweet potatoes at a high temperature: Roasting the sweet potatoes at a high temperature will help them caramelize and develop a crispy exterior.
  • Season the sweet potatoes well: Before roasting, season the sweet potatoes with salt, pepper, smoked paprika, and olive oil. You can also add other spices and herbs, such as garlic powder, onion powder, or cumin.
  • Roast the sweet potatoes until they are tender: The sweet potatoes are done roasting when they are tender when pierced with a fork. The cooking time will vary depending on the size of the sweet potato pieces and the temperature of the oven.

Conclusion:

Roasted sweet potatoes with smoked paprika are a delicious and versatile side dish that can be enjoyed with a variety of meals. They are easy to make and can be roasted in the oven or on the grill. The smoky flavor of the paprika adds a delicious depth of flavor to the sweet potatoes. Whether you are looking for a healthy side dish or a tasty snack, roasted sweet potatoes with smoked paprika are a great choice.
