Provided by Bobby Flay

Yield 8 servings

Number Of Ingredients 9

4 medium sweet potatoes, peeled and sliced 1/2-inch thick
1 bunch green onions
3/4 cup olive oil
1 tablespoon Dijon mustard
1/4 cup cider vinegar
1/4 cup balsamic vinegar
1 tablespoon honey
Salt and freshly ground pepper
1/4 cup coarsely chopped flat-leaf parsley

Steps:

  • Preheat grill. Brush potatoes and green onions with 1/4 cup of the olive oil. Grill the potatoes until tender, 4 minutes on each side. Cut the potatoes into 1-inch cubes and finely chop the green onions. (Do not grill the green onions.)
  • In a large bowl, whisk together the remaining 1/2 cup olive oil, mustard, vinegars, and honey and season with salt and pepper. Add the potatoes, green onions and parsley and mix until the potatoes are coated with the dressing. Season to taste with salt and pepper.

Tips:

  • For the best flavor, choose sweet potatoes that are firm and have smooth skin.
  • To prevent the sweet potatoes from sticking to the baking sheet, toss them with a little olive oil before roasting.
  • Roast the sweet potatoes until they are tender and slightly caramelized, about 20-25 minutes.
  • While the sweet potatoes are roasting, prepare the dressing by whisking together the olive oil, vinegar, honey, Dijon mustard, salt, and pepper.
  • Once the sweet potatoes are roasted, let them cool slightly before adding them to the salad.
  • To assemble the salad, combine the roasted sweet potatoes, green onions, and dressing in a large bowl. Toss to coat.
  • Serve the salad immediately or store it in the refrigerator for later.

Conclusion:

This roasted sweet potato and green onion salad is a delicious and healthy side dish that is perfect for any occasion. The sweet potatoes are roasted until they are tender and slightly caramelized, and the green onions add a sharp and refreshing flavor. The dressing is simple but flavorful, and it brings all of the ingredients together perfectly. This salad is sure to be a hit with your family and friends.
