6 ounces roasted red pepper, drained and dried
1/2 teaspoon Calabrian chile paste
1/4 teaspoon kosher salt
1 clove garlic, grated
8 ounces French feta (or other good-quality feta)

Steps:

  • Add the roasted red pepper, Calabrian chile paste, salt and garlic to the bowl of a food processor. Pulse until the mixture is chunky and evenly chopped. Using your hands, break the feta up into large chunks and add it to the food processor. Pulse the mixture until the feta is incorporated into the pepper mixture. (The mixture should remain slightly chunky.) Refrigerate for at least 30 minutes for the flavors to come together. Serve with crackers, veggies, on sandwiches or burgers. Spicy feta dip will keep, refrigerated in an airtight container, up to 1 week.

This is a recipe my sis and me came up with as a quick and healthy dip for a busy weeknight. It is creamy and has a lovely fresh taste from the bell pepper, while the roasted sunflower seeds add a great depth of flavour. I hope you enjoy!

1/3 cup sunflower seeds, shelled (organic preferred)
1/2 large red bell pepper, diced
80 g feta cheese, diced (fat-reduced is fine)
1/8 teaspoon garlic powder
1 teaspoon fresh rosemary (optional)
black pepper

Steps:

  • Heat a frying pan til quite hot. Dont add any oil or fat.
  • When the pan is hot add in the sunflower seeds and roast them for a few minutes until they start to brown. They will smell roasty when theyre ready and have a nice brown shimmer.
  • Set aside.
  • In a high rimmed bowl combine feta cheese, garlic powder, bell pepper and rosemary if using. Add sunflower seeds. Puree using a hand held blender until it has a nice creamy consistency. There will still be chunks, but thats ok.
  • Season with freshly ground black pepper to taste.
  • Enjoy!

1 cup sunflower seeds
2 quarts water
1/2 cup salt

Steps:

  • Place water and salt in a saucepan.
  • Rinse sunflower seeds and remove any plant or flower head matter.
  • Add sunflower seeds to water& salt in pan.
  • Bring water to a boil, then turn down to simmer.
  • Simmer 1 to 1 1/2 hours.
  • When done, strain water& seeds through collander& allow seeds to dry on paper toweling.
  • Do not rinse.
  • Preheat oven to 325 degrees.
  • Spread seeds on a cookie sheet& bake for 25 to 30 minutes.
  • Stir frequently.
  • Remove from oven when seeds are slightly browned& fragrant.
  • NOTE: for salt free seeds, simply eliminate the first 7 steps& go straight into oven preparation (Step 8).
