ROASTED SUGAR SNAP PEAS

Roasted Sugar Snap Peas image

In our CSA box this week we received close to two pounds of sugar snap peas. I've been searching online for recipes to use them. (Usually we end up eating most of the snap peas out of the bag the first day or two or add raw to salads.) This time around I wanted to try a different method of preparing. I divided the snap peas in...

Categories     Vegetable Appetizers

Time 30m

Number Of Ingredients 5

2-3 c sugar snap peas, ends trimmed or not
2 Tbsp olive oil, or other oil depending on what seasonings you choose
1-2 tsp seasoning of choice, or more, to taste (cajun, mexican, italian, herbs de provence, advieh, etc.)
2-4 Tbsp freshly grated parmesan (optional)
1/2 tsp coarse salt, to taste

Steps:

  • 1. Note: the snap peas will not become crispy or crunchy like potato chips. If I ever figure out how that is done I will let you know! Preheat oven to 350 degrees. Line 1 or 2 jelly roll pans with parchment paper.
  • 2. In a large mixing bowl combine the snap peas, oil and seasoning of choice. Stir well to coat.
  • 3. Arrange the vegetables evenly and singly on the parchment paper. You may have to use 2 jelly roll pans to fit them all.
  • 4. Bake for 1/2 hour, turning the pan around and flipping the snap peas over after 15 minutes.
  • 5. Remove from pan and if using cheese, lightly grate over the snap peas and serve. Can be served hot or at room temperature.

SPRING ANTIPASTO PLATTER

Spring Antipasto Platter image

The antipasto table in old-fashioned Italian restaurants is a sort of precursor to the modern-day salad bar, though usually far better. The idea is to let customers serve themselves (or be served by the maître d') a few spoonsful of room temperature vegetable preparations-grilled eggplant, roasted peppers, marinated mushrooms-along with a little cheese and salumi. It's an easy concept to adopt at home for a dinner party. Serve it buffet style, on a platter, or on individual plates as a first course. Change the vegetables seasonally; for spring use asparagus, fennel, snap peas and young onions. Choose the very freshest mozzarella, burrata or ricotta, and thinly sliced prosciutto, salame, mortadella or lardo.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 11

2 bunches small spring onions or scallions
Salt
1 bunch asparagus, about 1 pound, tough ends removed
1/2 pound sugar snap peas
2 medium fennel bulbs, trimmed and sliced crosswise into 1/8-inch-thick rings
4 ounces thinly sliced prosciutto, salame, mortadella or lardo
Flaky sea salt or fleur de sel
Black pepper
Extra-virgin olive oil
Basil or mint leaves
1 pound fior di latte, bufala mozzarella, burrata or fresh ricotta, at cool room temperature

Steps:

  • Heat the broiler. Put a large pot of water on to boil.
  • Trim tops, roots and outer layer of spring onions, then arrange in one layer on a broiler pan. Broil until they are lightly charred on one side, 2 to 3 minutes, then turn and broil the other side until onions have softened a bit, about 3 minutes more. (It's fine if they become blackened in spots.) Remove pan and let cool to room temperature.
  • When water boils, salt well and submerge asparagus. Cook briefly, about 2 minutes for medium spears. Lift asparagus from water and spread in 1 layer on a kitchen towel and let cool to room temperature. Repeat process with the sugar snap peas and spread them on a separate kitchen towel.
  • Arrange spring onions, asparagus, snap peas and fennel on a large platter. Drape prosciutto around the edge. Season vegetables lightly with sea salt and pepper and drizzle with olive oil. Garnish platter with basil or mint leaves. Put cheese on a small cutting board and pass separately. (Alternatively, compose individual plates with all components.)

Tips:

  • Choose crisp, tender snap peas. Look for pods that are bright green and have a slight snap when you bend them.
  • Trim the snap peas. Remove the stem end and the stringy tip from each pod.
  • Roast the snap peas at a high temperature. This will help them to caramelize and develop a delicious roasted flavor.
  • Season the snap peas with salt, pepper, and olive oil. You can also add other seasonings, such as garlic powder, onion powder, or smoked paprika.
  • Roast the snap peas until they are tender-crisp. This should take about 10-12 minutes.
  • Serve the snap peas immediately. They are best enjoyed hot and crispy.

Conclusion:

Roasted sugar snap peas are a delicious and healthy side dish that can be enjoyed as part of a weeknight meal or a special occasion dinner. They are easy to make and can be roasted in just 10-12 minutes. Serve them immediately with a sprinkle of fleur de sel for a finishing touch of flavor.
