This Roasted Vegetable Macaroni and Cheese is my favorite homemade macaroni and cheese. I love the addition of the roasted veggies, and the garlic that's added to the creamy, cheesy sauce gives it so much flavor. It's a win-win for adults and kids alike!

1 small head broccoli, (chopped)
1/2 red pepper, (diced)
1 yellow squash, (diced)
8 baby carrots, (sliced)
2 cups elbow macaroni
1/4 cup olive oil
1 garlic clove, (minced)
3 Tablespoon all purpose flour
1 1/2 cups milk ((I used a combination of milk and half-and-half))
2 cups sharp cheddar cheese, (shredded)
Salt and pepper (to taste)
3 Tablespoons panko breadcrumbs

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with either aluminum foil or a silicone baking mat. Spray with olive oil or cooking spray. Toss chopped vegetables onto baking sheet and roast in the preheated oven for 20 minutes or until softened.
  • Meanwhile bring a medium pot of salted water to boil, and cook pasta according to package directions. Drain and set aside.
  • Heat oil in a large skillet over medium heat. Add minced garlic and cook for 30 seconds, until fragrant. Whisk in flour and cook for 1 minute. Gradually whisk in milk, stirring constantly until mixture has thickened. Remove from heat and stir in cheese until melted and creamy. Season to taste with salt and pepper, and carefully mix in macaroni and vegetables.
  • Place mixture in a large baking dish and sprinkle panko over the top. Place under broiler and bake for 3-4 more minutes, or until top is golden brown.

1 cup broccoli florets, chopped into small chunks
1/2 red pepper, diced
1 yellow squash, quartered and diced
10 baby carrots, sliced thinly
2 cups whole wheat pasta, elbow macaroni, rotini, penne, etc.
1/4 cup olive oil
1 garlic clove, minced
3 Tbsp. all-purpose flour
1 1/2 cups milk
2 cups 8 oz. Sargento® Shredded Sharp Cheddar Cheese
1/2 tsp. crushed red pepper flakes
1/2 tsp. cayenne pepper
Salt and pepper, to taste
2 Tbsp. panko breadcrumbs

Steps:

  • Preheat oven to 400 degrees F. Set a medium pot of salted water to boil. Prepare a large baking sheet by lining with aluminum foil and coating with a little olive oil or nonstick cooking spray.
  • Toss broccoli, red pepper, squash and carrots onto the baking sheet. Bake for 20 minutes, or until vegetables have softened. Remove from oven and set aside.
  • Once water is boiling, lower heat slightly and add pasta, cooking according to package instructions. Drain and set aside.
  • Meanwhile, heat oil in a large skillet over medium heat. Once hot, add garlic and cook 30 seconds. Whisk in flour and cook 1 minute. Gradually whisk in milk, stirring constantly until mixture is slightly thickened. Remove from heat. Stir in cheddar cheese until well distributed and melted. Add red pepper flakes, cayenne pepper, salt and pepper. Add macaroni and vegetables.
  • Place mixture in a large casserole dish and sprinkle with panko breadcrumbs. Place under the broiler in your oven (500 degrees) for 3-4 minutes, or until the top is golden brown.

1 medium red onion
2 tablespoons olive oil
2 tablespoons honey
1 tablespoon minced fresh thyme
2 teaspoons kosher salt

2/3 cup mayonnaise
1/3 cup sour cream
1/4 cup spinach leaves
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh chives
1/4 teaspoon kosher salt
6 fresh basil leaves
Zest of 1 lemon
1/4 cup shredded Parmesan
2 tablespoons chopped fresh parsley

Steps:

  • For the roasted veggies: Preheat the oven to 450 degrees F. Line a baking sheet with parchment.
  • Slice the carrots and parsnips into 2-inch pieces, discarding the tops. Depending on your vegetables, you may need to slice thicker ends in half or even quarters and then slice them to achieve equal pieces. Cut the onion into thick slices. Transfer the vegetables to a large bowl.
  • In a small bowl, mix together the olive oil, honey, thyme, salt and pepper. Pour over the vegetables and toss to coat. Dump the vegetables onto the prepared baking sheet and spread into a single layer.
  • Roast, shaking the baking sheet once or twice while roasting, until the vegetables are dark and golden around the edges and tender in the centers, 40 to 45 minutes.
  • For the dip: While the vegetables are roasting, make the dip. Place the mayonnaise, sour cream, spinach, parsley, chives, salt, basil and lemon zest in a blender or food processor and process until smooth and green. Transfer to a serving bowl and refrigerate until ready.

150g butternut squash, cut into chunks
300g penne (we used Napolina 50% white 50% wholemeal)
40g butter
1 small leek, finely sliced (about 50g)
25g flour
600ml milk
100g frozen peas
175g mature Cheddar cheese (we used a vegetarian version)
1 slice day-old brown bread, blitzed into crumbs

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Put the butternut squash in a steamer over boiling water. Steam for around 15-20 mins or until tender. Drain and then blitz in a food processor until smooth.
  • Cook the pasta according to the pack instructions.
  • Heat the butter in a medium saucepan, add the leek and cook for 2 mins. Stir in the flour and cook for 1-2 mins more. Take the pan off the heat and gradually whisk in the milk. Return to the heat and bring to the boil, stirring all the time. Simmer for 5 mins. Stir in the peas and bring back to a simmer. Take the pan off the heat and stir in the butternut squash, then 125g cheese.
  • Stir the pasta into the sauce and transfer to an ovenproof dish. Sprinkle over the remaining cheese and the breadcrumbs. Bake for 20 mins or until golden and bubbling.

2 medium carrots, large diced (about 1 cup)
2 small ears of yellow corn, kernels cut off the cob
1 head broccoli (about 6 ounces), any fibrous parts removed, cut into small florets
2 tablespoons unrefined coconut oil, melted
Kosher salt and coarsely ground black pepper
1 pound elbow macaroni
1/2 cup half-and-half
1/2 cup whole milk
12 slices American cheese
4 ounces Colby Jack cheese, grated or small diced
1 1/2 to 2 teaspoons black truffle oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Add the carrots, corn and broccoli to a large bowl. Add the coconut oil, season with salt and pepper and stir to coat the vegetables. Put the mixture on a baking sheet and roast until the broccoli tips are just browning and the corn is tender, 12 to 15 minutes. Set aside.

25g cornflour
220g macaroni
100g extra mature cheddar , grated (check the label for vegetarian)
25g Grana Padano or vegetarian altenative, grated
8 blocks frozen spinach , defrosted
220g ripe cherry tomatoes , halved

  • Heat oven to 200C/180C fan/gas 6. Mix 3 tbsp of the milk with the cornflour and warm the remaining milk in a pan. Meanwhile, bring a pan of water to the boil, tip in the macaroni and cook for 6 mins, stirring occasionally.
  • To make the sauce, stir the cornflour mix into the warm milk and keep stirring over a low heat until thick and smooth. Remove from the heat and stir in most of the cheddar (leaving a little to sprinkle over at the end) along with the Grana Padano and pepper to taste.
  • Drain the macaroni well, then stir into the sauce. Squeeze the excess moisture from the spinach by pressing it into a fine sieve. Divide the spinach between four individual ovenproof dishes, followed by the tomatoes. Spoon the macaroni cheese over the veg, then finish with a sprinkle of the remaining cheddar. Bake for 15-20 mins or until the sauce bubbles and browns on top.
