Number Of Ingredients 8

1 lb tomatillos, husks discarded and rinsed
1 oz serrano chiles
2 cloves garlic
1 small white onion
1/4 c. loosely-packed cilantro
1/2 tsp salt
1 scant tsp sugar, if needed
juice of 1 lime

Steps:

  • Lay tomatillos and serranos on baking sheet and place 4 inches below very hot broiler. When blistered, blackened and softened on one side, turn and roast other side. Cool on baking sheet. Roast garlic with skin intact in an ungreased skillet over medium heat until softened (about 15 minutes). Cool and peel. Process cilantro, sugar, and juice of lime until fine. Add tomatillos, serranos, and garlic. Pulse until coarse puree.

Tips:

  • Choose the right serrano peppers: Look for peppers that are firm and smooth, with no blemishes or bruises. The color of the peppers can vary from green to red, with red peppers being slightly hotter.
  • Roast the peppers properly: Roasting the peppers brings out their flavor and makes them easier to peel. You can roast the peppers in the oven, on a grill, or over an open flame.
  • Remove the seeds and ribs: Once the peppers are roasted, remove the seeds and ribs. This will help to reduce the heat of the salsa.
  • Use fresh ingredients: The fresher the ingredients, the better the salsa will taste. Use ripe tomatoes, onions, cilantro, and lime juice.
  • Taste the salsa and adjust the seasonings: Once the salsa is made, taste it and adjust the seasonings to your liking. You may want to add more salt, pepper, or lime juice.

Conclusion:

Roasted Serrano Salsa is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is perfect for tacos, burritos, enchiladas, and other Mexican dishes. It can also be used as a dipping sauce for chips or vegetables. With its smoky flavor and just the right amount of heat, this salsa is sure to be a hit with everyone who tries it.
