Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 13

1 large pineapple (about 4 1/2 pounds)
2 large eggs
Kosher salt
3 tablespoons toasted sesame oil
One 5-ounce piece deli ham, diced
1/2 teaspoon sugar
3 cloves garlic, finely chopped
One 1-inch piece ginger, finely chopped
1 bunch scallions, sliced, white and green parts separated
3 tablespoons plus 1 teaspoon low-sodium soy sauce
3 cups leftover cooked white rice
1 bell pepper, diced
1/4 cup roasted unsalted peanuts, chopped

Steps:

  • Halve the pineapple lengthwise, right through the crown, keeping it attached. Put both halves cut-side up in front of you. On one of the halves, use a small sharp knife to cut into and around the perimeter of the fruit about 1/4 inch in from the peel. Locate the core in the center: cut it out on an angle on either side (it will look like a long V) and discard. Cut the remaining pineapple into a grid of small squares. Use a spoon to scoop the pieces out, leaving the pineapple empty. Chop any large pieces a little smaller and set aside in a bowl. Repeat with the other pineapple half, but reserve the pieces of fruit for another use.
  • Whisk together the eggs and a small pinch of salt in a small bowl. Heat 1 teaspoon of the oil in a large nonstick skillet over medium-high heat. Pour the eggs into the skillet and let them run freely until they cover most of the bottom. Cook, undisturbed, until the top is set and no longer runny, 4 to 5 minutes. Roll up into a cylinder and transfer to a cutting board. Cut into thin spiral slices.
  • Return the skillet to high heat and add 2 tablespoons oil. Once the oil just begins to smoke, add the ham, sugar, garlic, ginger, scallion whites and 1 teaspoon of the soy sauce and cook, stirring constantly, until the ham is browned, about 2 minutes. Add the rice, pepper and remaining 3 tablespoons soy sauce and cook, stirring occasionally, until the rice is heated through and the pepper is crisp-tender, about 3 minutes. Stir in the pineapple pieces, cooked egg, most of the peanuts and scallion greens, the remaining 2 teaspoons oil and salt to taste.
  • Fill each pineapple half with the fried rice. Sprinkle with the remaining peanuts and scallion greens.

Number Of Ingredients 14

1/2 cup smooth peanut butter, preferably natural
3 tablespoons unsweetened coconut milk
1 1/2 tablespoons lime juice, more as needed
2 teaspoons brown sugar
2 teaspoons soy sauce
2 teaspoons grated ginger
1 garlic clove, minced
1/2 teaspoon sriracha or other hot sauce

1/8 teaspoon red-pepper flakes
1 pound cleaned large shrimp
2 cups pineapple chunks
Whole cilantro leaves and torn basil leaves, for garnish

Steps:

  • In a food processor or blender, combine peanut butter, coconut milk, 3 tablespoons hot water, lime juice, sugar, soy sauce, ginger, garlic, sriracha and a pinch of salt. Purée until smooth. Add more lime juice and or salt to taste. Scrape into a bowl.
  • Heat oven to 500 degrees. In a small bowl, whisk together peanut oil, remaining 1/4 teaspoon salt and red-pepper flakes. Thread shrimp on skewers; brush all over with half the peanut oil mixture. Thread pineapple on separate skewers; brush with remaining oil mixture. Arrange shrimp and pineapple skewers on a large rimmed baking sheet.
  • Roast skewers, turning them halfway through, until shrimp is opaque, about 5 minutes, and pineapple is lightly caramelized, about 10 minutes. (Use an oven mitt to remove shrimp skewers as they finish cooking but leave the pineapple in for longer). Sprinkle skewers with herbs and serve hot, with peanut sauce for dipping.

Tips:

  • Choose ripe pineapples: Look for pineapples that are golden yellow in color, with no green streaks. The leaves should be fresh and green.
  • Use a variety of seafood: This recipe is a great way to use up leftover seafood. You can use any type of seafood you like, such as shrimp, crab, lobster, or scallops.
  • Cook the seafood properly: Be sure to cook the seafood until it is opaque and cooked through. Overcooked seafood will be tough and chewy.
  • Stuff the pineapples generously: Don't be afraid to stuff the pineapples full of seafood. The more seafood you use, the better the dish will be.
  • Bake the pineapples until they are golden brown: This will take about 30 minutes. Keep an eye on the pineapples so that they don't burn.
  • Serve the pineapples hot or cold: Roasted seafood stuffed pineapples can be served hot or cold. They are delicious either way.

Conclusion:

Roasted seafood stuffed pineapples are a delicious and impressive dish that is perfect for any occasion. They are easy to make and can be tailored to your own taste. So next time you're looking for a new and exciting way to prepare seafood, give this recipe a try. You won't be disappointed.
