I wasn't able to find a recipe like this for rutabaga anywhere, so I came up with one on my own, and it was fantastic! Just make sure that you thoroughly cook your rutabaga--it's not so good when it still has that bitter semi-raw taste.

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 12

1 1/2 pounds rutabaga, peeled and cut into 3/4-inch pieces
5 tablespoons extra virgin olive oil, more for drizzling
1 tablespoon maple syrup
3/4 teaspoon kosher salt, more to taste
Freshly ground black pepper to taste
1 1/2 cups farro
2 tablespoons finely chopped shallot
2 teaspoons red wine vinegar, more for drizzling

1/2 cup toasted, chopped hazelnuts
2 bunches watercress or arugula, cleaned and trimmed

Steps:

  • Preheat oven to 400 degrees. Toss rutabaga with 2 tablespoons oil, the maple syrup, 1/2 teaspoon salt and black pepper to taste. Spread out on a baking sheet and roast, stirring once or twice, until rutabaga is very tender and browned, 30 to 40 minutes.

CHILI ROASTED RUTABAGA

Chili Roasted Rutabaga image

Make and share this Chili Roasted Rutabaga recipe from Food.com.

Provided by dicentra

Categories     Vegetable

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 8

2 tablespoons vegetable oil
1 1/2 teaspoons chili powder
1 teaspoon onion powder
1 teaspoon garlic salt
1/2 teaspoon sugar
1/2 teaspoon paprika
1/4 teaspoon cayenne
1 1/2 lbs rutabagas

Steps:

  • Heat oven to 400. Mix first 7 ingredients in a medium bowl.
  • Peel rutabagas and cut them into chunks that are 2 inches long and ½-1 inch wide.
  • Toss with the spice mix.
  • Transfer to a large baking sheet, spreading pieces out evenly.
  • Bake until tender and somewhat browned, stirring occasionally, about 25 minutes.

Tips:

  • To enhance the flavor of roasted rutabagas, try coating them in olive oil, salt, and pepper, or experiment with other seasonings like rosemary, thyme, or garlic powder.
  • Ensure even cooking by cutting the rutabagas into uniform-sized pieces. Smaller pieces will cook faster, so adjust the roasting time accordingly.
  • Roast the rutabagas at a high temperature (400°F or above) to caramelize the natural sugars and create a slightly crispy exterior while keeping the inside tender.
  • Add a splash of water or vegetable broth to the roasting pan to prevent the rutabagas from drying out and to create a flavorful sauce.
  • Roast the rutabagas for 30-45 minutes, or until they are tender when pierced with a fork. If desired, increase the roasting time for a more caramelized flavor and texture.
  • For a visually appealing presentation, sprinkle chopped fresh herbs like parsley or cilantro over the roasted rutabagas before serving.

Conclusion:

Roasted rutabagas are a delicious and versatile side dish that can complement various main courses. Their naturally sweet and earthy flavor pairs well with savory dishes like roasted chicken or pork, hearty stews, or grilled fish. They can also be enjoyed as a snack or incorporated into salads, soups, and other dishes. With their vibrant color and nutritional value, roasted rutabagas add flavor, texture, and color to any meal.
