Time 40m

Yield 4 serving(s)

Number Of Ingredients 6

4 medium potatoes (about 1 1/3 lbs)
1 small onion, finely chopped
2 tablespoons vegetable oil or 2 tablespoons olive oil
2 tablespoons chopped fresh rosemary or 2 teaspoons dried rosemary leaves
1 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme leaves
salt and pepper

Steps:

  • Heat oven to 450.
  • Grease bottom and sides of baking sheet with shortening.
  • Cut potatoes into 1-inch chunks.
  • Mix remaining ingredients in large bowl.
  • Add potatoes; toss to coat.
  • Spread potatoes in single layer in pan.
  • Bake uncovered 20- 25 minutes, turning occasionally, until potatoes are light brown and tender when tested with a fork.

Tips:

  • Choose the Right Potatoes: Use small, waxy potatoes like baby potatoes, fingerling potatoes, or Yukon Gold potatoes. These hold their shape well and become tender on the inside while getting crispy on the outside.
  • Cut Potatoes Evenly: Cut the potatoes into uniform-sized pieces so they cook evenly. Aim for pieces that are about 1-inch thick.
  • Don't Overcrowd the Pan: When roasting the potatoes, make sure to spread them out in a single layer on the baking sheet. Overcrowding will prevent them from getting crispy.
  • Roast at High Temperature: Roast the potatoes at a high temperature (400°F or higher) to get them nice and crispy. This will also help to caramelize the onions.
  • Toss the Potatoes Regularly: Toss the potatoes and onions halfway through roasting to ensure even cooking and browning.
  • Season Well: Don't be shy with the seasonings! Rosemary, garlic, salt, and pepper are a classic combination that works well with potatoes and onions. You can also add other herbs and spices to your taste.
  • Serve Immediately: Roasted rosemary potatoes and caramelized onions are best served immediately, while they are still hot and crispy. They can be served as a side dish or as a main course.

Conclusion:

Roasted rosemary potatoes with caramelized onions are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be tailored to your taste preferences. With the right ingredients and a little bit of effort, you can create a dish that is sure to impress your family and friends.
