Yield 3 cups

Number Of Ingredients 6

1 1/4 pounds cashew nuts
2 tablespoons coarsely chopped fresh rosemary leaves
1/2 teaspoon cayenne
2 teaspoons dark brown sugar
2 teaspoons kosher salt
1 tablespoon melted butter

Steps:

  • Preheat the oven to 375 degrees F. Place the nuts on an ungreased baking sheet and bake for about 10 minutes until they are warmed through. Meanwhile, combine the rosemary, pepper, sugar, salt and butter in a large bowl. Toss the warm nuts with the rosemary mixture until the nuts are completely coated. Serve warm.

Tips:

  • Choose High-Quality Cashews: Opt for whole, unseasoned cashews to ensure the best flavor and texture.
  • Roast Cashews Properly: Spread the cashews in a single layer on a baking sheet and roast at the recommended temperature and time to achieve an even roast.
  • Use Fresh Rosemary: Fresh rosemary sprigs provide the best flavor and aroma. If using dried rosemary, use half the amount specified in the recipe.
  • Don't Overcrowd the Baking Sheet: Roasting the cashews in a single layer allows for even cooking and prevents steaming.
  • Let Cashews Cool Completely: Allow the roasted cashews to cool completely before storing or serving to ensure a crispy texture.

Conclusion:

Roasted rosemary cashews are an easy and delicious snack that combines the nutty flavor of cashews with the aromatic freshness of rosemary. With just a few simple ingredients and a short roasting time, you can create a flavorful and crunchy treat that is perfect for snacking, adding to salads, or using as a topping for yogurt or oatmeal. Experiment with different herbs and spices to create your own unique variations of roasted cashews. Enjoy them as a healthy and satisfying snack or share them with friends and family as a thoughtful homemade gift.
