Tips:

  • Choose the right rhubarb: Use firm, tart rhubarb stalks that are deep red in color. Avoid stalks that are soft, bruised, or have brown spots.
  • Roast the rhubarb, garlic, and onion before making the sauce: Roasting these ingredients brings out their natural sweetness and flavor. You can roast them in the oven or on the grill.
  • Use a variety of spices: This recipe uses a combination of spices, including smoked paprika, cumin, and chili powder, to create a complex and flavorful sauce. Feel free to adjust the spices to your liking.
  • Let the sauce simmer: Simmering the sauce allows the flavors to meld and deepen. Be patient and let it simmer for at least 30 minutes, or up to an hour.
  • Taste the sauce and adjust the seasonings: Once the sauce is done simmering, taste it and adjust the seasonings to your liking. You may want to add more salt, pepper, or spices.
