Categories     Soup

Time 40m

Number Of Ingredients 10

6 red bell peppers
½ cup yellow onion (chopped)
2 tbsp extra virgin olive oil
5 cloves garlic
4 cups chicken broth
2 tsp hot sauce
½ tsp salt
½ tsp ground black pepper
¼ cup sour cream
1 tsp dried oregano

Steps:

  • Clean the bell peppers, cut them in half and remove the seeds and membranes.
  • Place them on a baking sheet covered in foil, pressing them down to make them as flat as possible. Place the garlic cloves on the baking sheet among the peppers.
  • Place the baking sheet of peppers and garlic under the broiler in the oven and broil for about 15 minutes until the skins are blackened. Remove from the oven and place the peppers inside a tupperware container, and close the lid. This will allow the steam to soften them more. Keep in there for another 15 minutes.
  • While prepping the bell peppers, in a dutch oven, saute the onions with the olive oil until the onions are soft and translucent.
  • After peppers have cooled enough to touch, about 15 minutes. Remove from the tupperware and peel off the burnt skin. It will peel off. (I only peeled the burnt parts that were easily removed and left the skin that was still red and attached)
  • Place the bell pepper, garlic cloves, and onion into a food processor and processes for about 3-5 minutes until there are no large chunks left.
  • Add the mixture to the dutch oven, add in the chicken stock, hot sauce, salt, and pepper. Bring to a simmer, cover and allow to simmer for another 20 minutes.
  • Remove from the heat. Stir in the sour cream. Place the oregano in your hand and crush it up slightly to release the flavor and to make the pieces smaller, then pour into the pot. Stir until completely combined.
  • Serve with extra sour cream and fresh herbs on top if desired.

ROASTED RED PEPPER SOUP

Roasted Red Pepper Soup image

Today January 29th was the start of my husband's P90X regime and this was our first meal for supper that we had. This is right out of the nutrition plan cookbook and it was very delicious. I served it with a 7 whole grain bread that my inlaws picked up in Amish country with real butter. Wow, did it taste delicious with this soup....

Categories     Vegetable Soup

Time 45m

Number Of Ingredients 12

2 c white wine
1 small onion, finely chopped
5 roasted red peppers
2 c celery, chopped
1 Tbsp garlic, minced
2 plum tomatoes
1/4 c tomato paste
2 c fat-free chicken or vegetable broth, low sodium
1 Tbsp dried thyme
1/2 tsp black pepper
1/4 tsp ground cumin
dash salt

Steps:

  • 1. Heat wine in a large, heavy soup pot over medium heat. Add onion, red peppers, and celery. Cook and stir for 3 minutes. Stir in garlic. Cook for 2 more minutes, adding more wine if necessary.
  • 2. Next add your tomatoes, tomato paste, and chicken broth; cover and bring to a boil. Reduce heat and simmer for 25 to 30 minutes.
  • 3. Puree soup in a food processor or blender. Return to pan, add seasonings, and heat through. (I skimmed off some foam on top and after tasting this soup which is delicious it was a tad strong for me on the thyme. I think next time I will add only 1 tbsp of thyme.)
  • 4. If desired, you can add protein powder just before serving. (I served this with slices of 7 whole grain bread from Amish country with real butter. Nutritional value per serving: 57 calories, trace Total Fat (5% calories from fat) 3 g protein, 6 g carbohydrate, 0 mg cholesterol, 145 mg sodium

Time 1h

Yield 8 servings

Number Of Ingredients 13

4 tablespoons olive oil
2 onions, chopped
2 carrots, peeled and chopped
3 garlic cloves, chopped
2 teaspoons chopped fresh thyme leaves
6 cups chicken broth
2 (12-ounce) jars roasted red bell peppers preserved in water, drained
1 russet potato, peeled and coarsely chopped
1/2 cup dry white wine
1 tablespoon sugar
Salt and freshly ground black pepper
16 (3/4-inch thick) baguette slices, cut into 1/2 to 3/4-inch cubes
1/2 cup mascarpone cheese

Steps:

  • Heat 2 tablespoons of oil in a heavy large pot over medium-high heat. Add the onions, carrots, garlic, and thyme and saute until the onions are translucent, about 5 minutes. Add the broth, bell peppers, potato, wine, and sugar. Bring to a simmer over high heat. Decrease the heat to medium-low. Partially cover and simmer until the potatoes are very tender, stirring occasionally, about 30 minutes. Cool the soup slightly.
  • Using an immersion hand blender, puree the soup in the pot until it is smooth. Alternately, working in batches, puree the soup in a regular blender, taking care while blending warm liquids. Season the soup, to taste, with salt and pepper.
  • Meanwhile, heat the remaining 2 tablespoons oil in a heavy large skillet over medium heat. Add the bread cubes and saute until they are crisp and golden, about 8 minutes.
  • Ladle the soup into bowls. Dollop a tablespoon of mascarpone in the center of each bowl and top with croutons. Sprinkle with pepper and serve.

RED PEPPER SOUP

While I don't have scientific proof of it, Red Pepper Soup works for me as a head cold remedy! It is a good gift to take when visiting a sick friend, too. For a pretty touch, top the soup with grated cheese and parsley. We enjoy it with jalapeno cheese buns. You can also serve it with warm garlic bread. -Barb Nelson, Victoria, British Columbia
