ROASTED RED PEPPERS

Need Roasted Red Peppers for a recipe? Make them at home with Ina Garten's easy recipe from Barefoot Contessa on Food Network; all you need is an oven.

Provided by Ina Garten

Time 1h20m

Yield 4 to 6 servings

Number Of Ingredients 2

4 large red or yellow bell peppers, preferably Holland
2 tablespoons good olive oil

Steps:

  • Preheat the oven to 500 degrees.
  • Place the whole peppers on a sheet pan and place in the oven for 30 to 40 minutes, until the skins are completely wrinkled and the peppers are charred, turning them twice during roasting. Remove the pan from the oven and immediately cover it tightly with aluminum foil. Set aside for 30 minutes, or until the peppers are cool enough to handle.
  • Remove the stem from each pepper and cut them in quarters. Remove the peels and seeds and place the peppers in a bowl along with any juices that have collected. Discard the stems, peels, and seeds. Pour the oil over the peppers. Cover with plastic wrap and refrigerate for up to 2 weeks.

Tips:

  • To roast red peppers easily, place them directly over the flame of a gas burner or under a broiler until the skin is blackened and blistered. Then, place the peppers in a paper bag to steam for 10 minutes. Once cool enough to handle, peel off the charred skin and remove the seeds and ribs.
  • For a smoky flavor, roast the red peppers over a wood fire.
  • If you don't have time to roast red peppers, you can use jarred roasted red peppers. Just be sure to drain them well before using.
  • To make the dip ahead of time, simply roast the red peppers and store them in an airtight container in the refrigerator for up to 3 days. When ready to serve, bring the peppers to room temperature and then blend them with the other ingredients.
  • Serve the dip with pita chips, crackers, or vegetables.

Conclusion:

Roasted red pepper dip is a delicious and versatile appetizer or snack. It's easy to make and can be tailored to your own taste preferences. Whether you like it spicy, smoky, or creamy, there's a roasted red pepper dip recipe out there for you. So next time you're looking for a quick and easy party appetizer, give roasted red pepper dip a try. You won't be disappointed!
