SOUR CREAM AND ROASTED RED ONION DIP
Here's how to make onion dip without standing near the stove for an eternity, waiting for onions to caramelize: Roast rings of onion in the oven with the teeniest bit of sugar for 40 minutes for effortlessly faux-caramelized onions. Red onions are naturally a bit sweeter and mellower than white ones, especially when they get brown and slouchy, but lemon juice, chives and raw garlic will perk them right up. The creaminess - what we're here for - comes from three sources: sour cream, mayonnaise and Greek yogurt, a nice counter to the crisp potato chips you'll, of course, serve it with.

Steps:
- Heat the oven to 400 degrees, and line a baking sheet with parchment paper. Arrange the onion slices in a single layer on the prepared sheet, leaving room between each. (Use 2 baking sheets if the onions won't all fit comfortably on 1.) Drizzle with olive oil, sprinkle with 1 teaspoon salt and the sugar and gently flip to coat, keeping the rings as intact as possible. Cook for 30 to 40 minutes, turning once, until soft and browning (It's O.K. if some parts get crisp and charred).
- Let the onions cool slightly, then transfer to a cutting board and roughly chop. (You want to have small pieces of onion without making a paste.)
- Transfer the onions to a medium bowl and add the sour cream, yogurt, mayonnaise, garlic, remaining 3/4 teaspoon salt, lemon juice and black pepper. Fold to combine.
- Transfer to a serving dish and garnish with minced chives. Serve with potato chips.

ROASTED RED ONION MAYO
This is a great spread for almost any sandwich. (It could probably be used for a dip or could maybe be thinned a bit for a dressing, but I've never tried it that way). I usually make a double batch and keep a jar of this in my fridge at all times for a quick and tasty sandwich spread. (I have made this both ways... with mayo or Miracle Whip. Each are yummy with different flavors). I hope you enjoy this recipe. *Note: Prep and cook times do not include cooling or refrigeration times.

Steps:
- Preheat oven to 375*F.
- Spread roughly chopped onions out on a small rimmed baking sheet and drizzle with olive oil. Sprinkle with salt and freshly ground black pepper. Toss all together to coat and spread evenly on the pan. Roast for 25-30 minutes, checking at 20 and again at 25. Onions should be soft and starting to brown. Remove from oven and let cool completely.
- Once onions are cooled, put them into a food processor and pulse until the onions are finely chopped. Add mayo and pulse until the spread becomes incorporated. Taste for desired seasoning, adding more if desired. (If the spread sits in the fridge overnight while flavors meld, the flavor will change, so use caution on the seasonings). I recommended that you make this at least 8 hours before using for best taste.
- Enjoy on anything that you like mayo spread on.

ROASTED RED ONIONS WITH BUTTER, HONEY, AND BALSAMIC VINEGAR
Steps:
- Preheat the oven to 350 degrees F.
- Combine the butter, vinegar, honey, thyme, salt, and pepper in a small saucepan over medium heat. Bring to a simmer and cook for 1 minute to reduce slightly. Place the onions, cut sides up, in a single layer on a baking pan. Drizzle the butter-vinegar mixture over and roast until soft and slightly caramelized, about 45 minutes.
Tips and Conclusion
Tips:
- Choose small to medium-sized red onions as they roast more evenly than larger ones.
- Use a sharp knife to cut the onions into thin slices, about 1/4-inch thick. This will help them cook evenly.
- Toss the onion slices with olive oil, salt, and pepper before roasting. This will help them caramelize and brown.
- Roast the onion slices at a high temperature, around 425°F (220°C), until they are tender and slightly charred. This will take about 20-25 minutes.
- Once the onion slices are roasted, let them cool slightly before adding them to the mayonnaise. This will prevent the mayonnaise from curdling.
- You can use roasted red onion mayonnaise as a spread for sandwiches and wraps, or as a dipping sauce for vegetables, chips, and fries.
- If you want to make a vegan version of roasted red onion mayonnaise, you can use aquafaba (the liquid from a can of chickpeas) instead of eggs.
Conclusion:
Roasted red onion mayonnaise is a delicious and versatile condiment that can be used in a variety of dishes. It is easy to make and can be customized to your liking. So next time you are looking for a new and flavorful mayonnaise to try, give roasted red onion mayonnaise a try. You won't be disappointed!
