Number Of Ingredients 2

4 large red or yellow bell peppers, preferably Holland
2 tablespoons good olive oil

Steps:

  • Preheat the oven to 500 degrees.

EASY ROASTED RED BELL PEPPERS

Easy Roasted Red Bell Peppers image

These are wonderful to use in so many recipes, use right away or refrigerate in a jar --- to store in the refrigerator place the cooled roasted peppers in the jar then cover with oil, add in a pinch of salt, cover tightly with a lid then shake to distribute the salt, refrigerate for up to 3 days, for a large jar use 1/8 teaspoon salt --- do not skip step #5 or you will have a harder time peeling the peppers --- if you are using for salads they are best if brought down to room temperature ---- you may of coarse increase the bell peppers to whatever amount desired :)

  • Rub the outside of the pepper halves with olive oil.
  • Arrange cut-side down in one layer onto a baking sheet or a shallow pan.
  • Preheat the broiler and set the oven rack 4-5 inches from the heat.

  • Transfer to a plate or bowl and immediately cover tightly with heat-proof heavy plastic wrap (I like using Saran Wrap for this).
  • Allow to stand for about 20-25 minutes.
  • When the peppers are cool enough to handle peel off the the skin.

SHEET-PAN ROASTED FISH WITH SWEET PEPPERS

Sheet-Pan Roasted Fish With Sweet Peppers image

Quick to make and very pretty to behold, this easy weeknight dish has more verve than most. The roasted bell peppers turn sweet and golden, while olives add a salty note that goes nicely with the mild, flaky fish and a garlicky parsley dressing. If you can't find hake, cod or flounder make fine substitutes, though you may have to adjust the roasting time. The thicker the fillets, the longer they will take to cook.

Categories     weekday, main course

Time 40m

Yield 3 to 4 servings

Number Of Ingredients 9

1 small bunch lemon thyme or regular thyme
1 1/2 pounds hake fillets
Fine sea salt and black pepper
3 large bell peppers, preferably 1 red, 1 orange and 1 yellow, thinly sliced
4 1/2 tablespoons extra-virgin olive oil, plus more for drizzling
1/4 cup pitted, sliced black or green olives, or a combination
1 teaspoon sherry vinegar, plus more to taste
1 garlic clove, grated
1 cup loosely packed Italian parsley leaves, chopped

Steps:

  • Heat oven to 400 degrees. Pull 1 tablespoon thyme leaves off the bunch and finely chop.
  • Season fish all over with a large pinch or two of salt and pepper and rub with chopped thyme leaves. Let rest at room temperature while you prepare peppers.
  • Spread peppers on a rimmed sheet pan, and toss with 1 1/2 tablespoons oil, 1/2 teaspoon salt and the black pepper to taste. Top peppers with the remaining thyme sprigs. Roast, tossing occasionally, until peppers are softened and golden at the edges, 15 to 20 minutes.
  • Increase oven temperature to 500 degrees. Push peppers to the edges of the pan, clearing a space in the center. Lay fish out on that empty space and drizzle with oil. Scatter olives over the top of fish and peppers. Roast until fish turns opaque and is just cooked through, 6 to 10 minutes.
  • Meanwhile, make a vinaigrette by combining vinegar, garlic and a pinch of salt in a bowl. Whisk in remaining 3 tablespoons olive oil, then whisk in parsley. Taste and add more salt or vinegar, or both, if needed. Serve fish and peppers drizzled with vinaigrette.

Yield Makes 2 cups

Number Of Ingredients 7

16-ounce jar fire-roasted red peppers with their juices
1 tablespoon Sherry vinegar
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup extra-virgin olive oil
Garnish:
parsley, olive oil, minced bell peppers, toasted coriander seeds, caper berries, feta, or minced hard-boiled egg

Steps:

  • Purée one 16-ounce jar fire-roasted red peppers with their juices, 1 tablespoon Sherry vinegar, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper in a blender on high speed until very smooth, about 1 minute. With motor running, gradually add 1/4 cup extra-virgin olive oil. Season to taste with salt, pepper, and more vinegar, if desired. DO AHEAD: Soup can be made 1 day ahead. Cover; chill.
  • Divide soup among small cups or shot glasses. Garnish with parsley, olive oil, minced bell peppers, toasted coriander seeds, caper berries, feta, or minced hard-boiled egg.

Tips:

  • Choose the right peppers: Look for firm, brightly colored peppers with smooth, unblemished skin.
  • Roast the peppers properly: Roast the peppers at a high temperature until they are blistered and charred. This will help to develop their flavor.
  • Let the peppers cool: Once the peppers are roasted, let them cool slightly before handling them. This will make them easier to peel and seed.
  • Use a good quality sherry vinegar: Sherry vinegar is a key ingredient in this recipe. Choose a vinegar that is well-balanced and has a slightly sweet flavor.
  • Adjust the seasoning to taste: The amount of garlic, salt, and pepper you use in this recipe can be adjusted to your taste. Taste the peppers before serving and add more seasoning if needed.

Conclusion:

Roasted red bell peppers with sherry vinegar are a delicious and versatile dish that can be served as an appetizer, side dish, or main course. The peppers are roasted until they are tender and slightly charred, then tossed in a flavorful vinaigrette made with sherry vinegar, garlic, and herbs. This dish is perfect for a summer meal or a special occasion.
