4 small bone-in, skin-on chicken breasts (2 1/2 pounds total), halved crosswise

Steps:

  • Preheat oven to 450 degrees with rack in upper third. In a large straight-sided ovenproof skillet, heat 1/4 cup oil over medium-high. Add eggplant and cook, stirring frequently, until just beginning to brown, about 4 minutes. Add zucchini, garlic, and remaining 1 tablespoon oil.   • Heat oven to 450 degrees. Cut squash lengthwise into 3/4-inch-thick slices. Liberally brush both sides of the eggplants and squash with olive oil, and sprinkle with salt and black pepper. Arrange the eggplant and squash on a large baking pan.
  • Cut the red pepper lengthwise into 3/4-inch-thick slices, and toss with the remaining olive oil. Sprinkle with salt and pepper, and place on the baking pan with the other vegetables. 2 tablespoons olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 large tomatoes, cut into 1-inch cubes

1/4 cup minced fresh flat-leaf parsley

Steps:

  • Position the oven racks so that they are evenly spaced. Preheat the oven to convection roast at 475°F. Line a large rimmed cookie sheet with foil and coat with nonstick spray.

6 sprigs fresh thyme, leaves stripped from 2

1 small fennel bulb, thinly sliced into rings
1/2 yellow onion, thinly sliced
1 cup haricot verts, tops removed
1 cup 1/4-inch-thick rings crookneck squash
1/4 cup extra-virgin olive oil
1/2 cup Garlic Chili Tomato Butter, recipe follows
1/4 cup parsley leaves, chopped, plus whole leaves for garnish
Juice of 1 lemon
Kosher salt and freshly ground black pepper
3 slices bacon, cut into lardons
1/2 yellow onion, diced
Kosher salt
2 tablespoons extra-virgin olive oil
4 cloves garlic, sliced
1 teaspoon tomato paste
1/2 teaspoon crushed red pepper flakes
1 medium tomato, diced
1 stick (4 ounces) butter, diced, cool room temperature
Freshly ground black pepper

Steps:

  • Put an oven rack at the top of the oven and preheat the oven to 450 degrees F. Toss the patty pan squash, eggplant, 4 sprigs of thyme, 3 sprigs of marjoram, the fennel, onion, haricot vert and crookneck squash with the olive oil until coated. Season with salt and pepper. Spread the vegetables on a baking sheet and roast until tender and browned, about 15 minutes. Discard the sprigs of thyme and marjoram.
  • Transfer the roasted vegetables to a large mixing bowl. Add the thyme and marjoram leaves, the parsley and the Garlic-Chili-Tomato Butter and mix well. Taste, and season with lemon juice, salt and pepper. Serve warm or at room temperature.
  • Place a large skillet over medium heat. Add the bacon and cook until it is crisp and the fat is rendered.
  • Once the bacon has rendered all the fat, add the onion, season with salt and cook, stirring occasionally, until the onion is translucent, about 5 minutes. (If the pan seems dry while you are cooking the onion, add some of the olive oil.) Add the garlic and cook, stirring for 2 minutes. Add the tomato paste and the crushed red pepper flakes stir to toast for just 15 seconds. Stir in the diced tomatoes, and cook, stirring occasionally, until the excess liquid has almost completely cooked away.
  • Put the mixture in a blender and puree until smooth. Transfer the mixture to a bowl and cool to room temperature. Use a wooden spoon to work the butter into the tomato mixture until combined. If you are not using the butter right away, cover it and chill it until you do. Makes 3/4 cup.

1 butternut squash, peeled, deseeded and cut into wedges
1 head garlic, divided into whole peeled cloves
3 ounces cheddar cheese, sliced
1/3 cup olive oil
8 ounces tomatoes, quartered
1/2 ounce fresh thyme, roughly chopped

Steps:

  • Preheat the oven to 400°F
  • Place all the ingredients, except 3 garlic cloves and cheese slices, in a large, deep roasting tin.
  • Roast in the oven for about 40 minutes or until the vegetables are beginning to soften and turn golden brown. Stir occasionally as they cook.
  • While the vegetables are cooking, place 3 garlic cloves and cheese slices in a food processor or blender and pulse into rough breadcrumbs.
  • When the vegetables are ready, remove from the oven and season with freshly ground black pepper.
  • Sprinkle the crumbs over the ratatouille and return to the oven for a further 15 minutes or until the crumbs are golden and crispy.

1 -2 small zucchini
1 red pepper
1 large Spanish onions or 1 large vidalia onion
2 dozen cherry tomatoes
3 -4 garlic cloves (optional)

1 teaspoon dried oregano
1 teaspoon dried basil
2 tablespoons olive oil
2 ounces goat cheese (Chevre)
8 -10 fresh basil leaves, chopped

Steps:

  • Line a sheet pan with aluminum foil.
  • Spray with cooking spray.
  • Cut the eggplant unpeeled into 1" cubes.
  • Cut the zucchini into 1" cubes.
  • Cut the red pepper into 1" cubes.
  • Cut the onion into large wedges maybe 8-10 pieces.
  • Leave the tomatoes whole and also the garlic if using.

1/3 cup whole grain pastry flour (or whole wheat flour)
1/4 teaspoon salt
2 tablespoons butter, still a bit cold
2 tablespoons canola oil
3 tablespoons water
2 tablespoons olive oil plus 1 teaspoon olive oil
2 shallots, thinly sliced (about 1/3 cup)
cooking spray
1/2 lb eggplant, rounds thinly sliced (about 1/2 pound)
1 zucchini, sliced into 1/8-inch rounds (about 1/2 pound)
3 tomatoes, thinly sliced
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3/4 cup part-skim mozzarella cheese, shredded (about 3 ounces)
1/4 cup fresh basil leaf, shredded
1/4 cup parmesan cheese, grated

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust: Combine cornmeal, flour, and salt in the bowl of a food processor. Pulse to incorporate. Add butter and oil and pulse about 20 times, until mixture resembles small pebbles. You can also do this by hand, using a pastry cutter to cut the butter in, or the two-knife method.
  • Add water and pulse (or stir with a wooden spoon) until mixture forms a loose dough.
  • Remove dough from processor (or bowl) and press into the bottom and about 1/8-inch up the sides of a 9-inch tart pan with a detachable rim (or a springform pan).
  • Press aluminum foil into the bottom and sides of the pan on top of the dough and weigh down with uncooked rice, raw beans, or pie weights.
  • Place tart pan on a baking sheet and bake for 10 minutes.
  • Remove from the oven and remove rice (or beans or pie weights) and foil. Return to oven and bake for an additional 5 minutes, or until no longer shiny and wet. Remove from oven and let cool.
  • Increase the oven to 400 degrees F.
  • For the filling: Heat 1 teaspoon of olive oil in a nonstick pan over medium heat; saute shallots until soft, about 5 to 6 minutes.
  • Line 2 baking trays with aluminum foil, and spray with cooking spray.
  • Arrange the eggplant, zucchini, and tomato slices on the trays in a single layer and brush with the remaining olive oil. Season with salt and pepper, and roast the vegetables until soft but not browned, about 15 minutes.
  • Remove the vegetables from oven and cool.
  • Lower the oven temperature to 350 degrees F. Lay the eggplant slices in 2 layers on the bottom of tart; cover with 1/3 of the mozzarella cheese and some of the shredded basil.
  • Add the zucchini and shallots, top with another 1/3 of the mozzarella and basil, then the tomatoes.
  • Top with rest of the mozzarella cheese and the Parmesan.
  • Bake for 25 to 30 minutes, or until cheese is melted and vegetables have further wilted.
  • Remove from oven, let cool for 5 minutes, and cut into 8 slices.
  • Serve warm.

Olive oil, to saute
1 medium onion, peeled and diced
Olive oil, to saute
1 clove garlic, peeled and minced
1/4 cup tomato paste
1 red pepper, roasted, peeled and diced
1 yellow pepper, roasted, peeled and diced
2 Roma tomatoes, peeled, seeded and diced
Salt and pepper, to taste
1/4 cup lemon juice
3 zucchini
6 cloves garlic, peeled, triple blanched
1 tablespoon olive oil
1/2 cup chicken stock
1/4 cup cream
1/8 pound fresh, clean spinach (about a handful)

Steps:

  • Take halibut fillets and, in a 6-inch, oven-safe pan with olive oil, saute 1 side of halibut for 3 minutes over high heat. Remove and turn over halibut in pan. Place the pan with fish into a preheated 400-degree oven and bake for six minutes. Remove from oven.;
  • Roasted Pepper and Tomato Salad: Sweat diced onions in olive oil, add diced garlic. Add enough oil to cover the onions, then add tomato paste and cook for about 6 minutes, stirring constantly. Pour onion mixture over diced, roasted peppers and tomatoes. Season with salt and pepper and lemon juice. Mix well and let sit for 30 minutes. Let drain for one hour.;
  • Zucchini Puree: Cut green zucchini away from the center and dice. Triple blanch peeled garlic by boiling in water, then shocking in cold water and repeating this process 2 more times. Set aside. In a medium pan, add olive oil and zucchini, allowing time for zucchini to sweat. Then, add chicken stock, cover, and let simmer for 15 to 20 minutes. Add triple blanched garlic and cream, cook further for 5 minutes. Blend in a blender, adding fresh spinach. Strain into a bowl resting in an ice bath and let cool immediately.
  • Basil Puree: 1 raw egg yolk 1 tablespoon rice wine vinegar 5 large leaves basil 3/4 cup grapeseed oil Salt and pepper, to taste
  • Basil Puree: Place egg yolk with rice wine vinegar and basil in a blender. Blend adding grapeseed oil slowly until thick. Season with salt and pepper.
  • Eggplant and Onions: 3 tablespoons honey 1 tablespoon thyme, chopped 1 eggplant 1 large Spanish onion, peeled
  • Eggplant and Onions: Mix the honey with the thyme and let stand 30 minutes. Slice eggplant about 1 to 1 1/2 inches thick. Rinse and dry. Sear on flat grill on both sides. Brush with thyme infused honey and bake in the oven for 10 to 15 minutes. Slice onion about 1/2-inch thick. Sear on the grill, then roast in preheated 375-degree oven for 10 minutes.

1 cup le puy French lentils
2 1/2 cups vegetable broth
1 cup white wine
1 teaspoon kosher salt
2 teaspoons herbes de provence
1 bay leaf
1 sprig rosemary
2 medium eggplants, cubed
3 medium zucchini, halved & sliced
3 red bell peppers, cut into 1-inch pieces
1 large onion, peeled, halved & sliced
6 roma tomatoes, quartered lengthwise
1 head garlic, cloves peeled & halved
2 tablespoons crushed rosemary (or minced)
1 cup extra virgin olive oil
2 teaspoons kosher salt

Steps:

  • Preheat oven to 450°F.
  • Combine lentils through rosemary in a 3qt saucepan. Bring to a simmer, cover & cook on low 20 minutes.
  • Put prepared vegetables on roasting pans (I need 3 of them - 1 for eggplant, 1 for tomatoes, zucchini & onions, 1 for peppers & garlic). Sprinkle evenly with crushed rosemary then drizzle with olive oil, coating vegetables well.
  • Roast for 20 minutes. Check for doneness - they should be browned lightly & softened. If not quite ready, leave them in until they are. When done, remove from oven & sprinkle lightly & evenly with kosher salt.
  • Check lentils: they should be cooked but not mushy. If there is still a lot of liquid, uncover & turn heat up. You want enough liquid to be saucy not soupy. On the drier side is ok, just be careful not to scorch them.
  • Combine all ingredients in a large bowl and enjoy.
