Time 35m

Number Of Ingredients 8

1 pound rainbow carrots (peeled and cut into long, even pieces)
1 tablespoon olive oil
1/4 teaspoon kosher salt

Tips:

  • Choose vibrant carrots: Opt for carrots with deep, vivid colors, as these retain their vibrant hues better during roasting.
  • Trim and prep the carrots: Trim the carrot tops and scrub them clean. Leave baby carrots whole and cut larger carrots into uniform sizes for even roasting.
  • Use high-quality olive oil: Drizzle the carrots with extra-virgin olive oil, ensuring even coating. The oil helps caramelize the carrots, resulting in a sweet and savory flavor.
  • Season generously: Sprinkle a generous amount of salt and pepper over the carrots. You can also add herbs like thyme, rosemary, or oregano for extra flavor.
  • Roast at a high temperature: Preheat your oven to 425°F (220°C) and roast the carrots for 20-25 minutes. The high temperature helps caramelize the natural sugars in the carrots, creating a slightly charred and sweet exterior.
  • Keep an eye on the carrots: Check the carrots halfway through the roasting process and give them a gentle toss to ensure even cooking and prevent burning.
  • Serve immediately or store for later: Roasted rainbow carrots are best served immediately while still warm and tender. If you have leftovers, store them in an airtight container in the refrigerator for up to 4 days.

Conclusion:

Roasted rainbow carrots are a simple yet stunning side dish that packs a punch of flavor and color. With their naturally sweet taste and vibrant hues, these carrots make a delightful addition to any meal. Whether you're hosting a special occasion dinner or looking for a quick and healthy weeknight side, roasted rainbow carrots are sure to impress. So next time you're in search of a colorful and flavorful side dish, give this recipe a try – you won't be disappointed!
