Best 5 Roasted Radishes With Capers And Anchovies Recipes

Roasted radishes are a delicious and healthy side dish or snack. They're easy to make and can be roasted in the oven or on the grill. This recipe uses capers and anchovies to add a salty, briny flavor to the radishes. The capers and anchovies also help to tenderize the radishes and prevent them from becoming too dry. This recipe also includes instructions for making a simple lemon-tahini sauce to serve with the roasted radishes. The sauce adds a creamy, tangy flavor to the radishes and helps to balance out the salty flavor of the capers and anchovies.

Also included is an alternative to the lemon-tahini sauce: a simple garlic-herb butter. This is a great option if you don't have tahini on hand or if you prefer a more savory sauce. To make the garlic-herb butter, simply combine softened butter, minced garlic, chopped fresh herbs (such as thyme, rosemary, or parsley), and a pinch of salt and pepper. Spread the butter over the roasted radishes before serving.

ROASTED RADISHES WITH ANCHOVIES

Roasted Radishes With Anchovies image

Crisp radishes turn sweet and juicy when briefly roasted at high heat. Here, the chef Bryan Hunt from Riverpark restaurant in Manhattan coats them in a pungent anchovy-rich bagna cauda sauce. This is best served warm rather than piping hot. You can make the anchovy mixture up to 3 days ahead. Store it in the fridge and bring it to room temperature before using.

Yield 8 servings

Number Of Ingredients 7

1 (2.8-ounce) jar oil-packed anchovies, drained
1/3 cup plus 3 tablespoons extra-virgin olive oil
1/2 garlic clove, grated
2 bunches radishes with fresh greens (1 1/2 pounds), preferably French breakfast radishes
1 tablespoon unsalted butter
2 teaspoons chopped parsley
1 1/2 teaspoons lemon juice, more to taste

Steps:

  • In a small saucepan over very low heat, combine anchovies and 1/3 cup olive oil. Cook, stirring occasionally, until anchovies have melted into the oil, about 5 minutes. Remove from heat and stir in garlic.
  • Clean the radishes thoroughly under running water, leaving any nice greens attached if possible; drain and dry very well. Leave smaller radishes whole and halve any large ones lengthwise.
  • Heat oven to 400 degrees. Heat a very large ovenproof skillet over medium-high heat. Add the remaining 3 tablespoons oil. Add the radishes in a single layer. Cook, without moving, until undersides are golden brown, 3 to 5 minutes. Flip radishes and transfer skillet to oven. Cook until radishes are tender enough to be easily pierced with a knife, 10 to 20 minutes, depending on size of radishes.
  • Return skillet to stove top over medium-high heat. Toss with anchovy oil, butter, parsley and lemon juice. Serve warm.

Midnight Pasta With Garlic, Anchovy, Capers and Red Pepper image

There's something about pasta, cooked properly, that trumps all the other possibilities. And the smell of pasta boiling is a heady cheap thrill. With a few basic staple pantry items, a true feast can be ready in minutes. Good spaghetti, good olive oil, garlic and a little red pepper are all you need, plus some anchovy and capers if you have them.

Time 20m

Yield 2 servings.

Number Of Ingredients 9

1/2 pound spaghetti
Salt
3 tablespoons extra virgin olive oil
4 garlic cloves, peeled and roughly chopped
4 anchovy filets, rinsed and roughly chopped
1 tablespoon capers, rinsed and roughly chopped
1/2 teaspoon red pepper flakes, or to taste
2 tablespoons chopped parsley, optional
Parmesan for grating, optional

Steps:

  • Put the spaghetti in a large pot of well-salted rapidly boiling water and cook only until firmly al dente. (Depending on the brand of pasta, this will be 8 to 10 minutes, but check frequently to see. )
  • While the pasta is cooking, warm the olive oil in a small skillet over medium heat. Add the garlic and cook for about 1 minute, without letting it brown. Stir in the anchovies, capers and red pepper and cook for a half-minute more, then turn off the heat.
  • Drain the pasta and return it to the pot. Pour in the garlic mixture, add the parsley, if using, and toss well to coat. Serve with grated Parmesan if desired.

ROASTED RADISHES

Roasted Radishes image

I saw a recipe for baked radishes in a magazine long, long ago and the thought so intrigued me I just had to give it a try. This is my personalized version of the original. I often switch out the thyme with either rosemary, basil, or crushed garlic, depending on my mood and what main dish these will be served with.

Tips and Conclusion

Tips:

- Choose fresh, firm radishes for the best flavor. Smaller radishes will cook more evenly than larger ones. - If you don't have capers, you can substitute chopped olives or cornichons. - Anchovies can be rinsed and patted dry before using to reduce their saltiness, but you can omit them entirely if you don't like the flavor. - Roast the radishes until they are tender and slightly caramelized, but not mushy. - Serve the roasted radishes immediately or at room temperature.

Conclusion:

Roasted radishes with capers and anchovies are a simple but flavorful side dish that can be enjoyed as part of a weeknight meal or a special occasion dinner. The radishes are roasted until tender and slightly caramelized, and the capers and anchovies add a salty, briny flavor. This dish is also a good source of vitamins and minerals, including vitamin C, potassium, and fiber.
