I saw a recipe for baked radishes in a magazine long, long ago and the thought so intrigued me I just had to give it a try. This is my personalized version of the original. I often switch out the thyme with either rosemary, basil, or crushed garlic, depending on my mood and what main dish these will be served with.

Tips:

  • Choose the right radishes: Look for small, firm radishes with vibrant color. Avoid any radishes that are soft or have blemishes.
  • Roast the radishes properly: To achieve perfectly roasted radishes, toss them with olive oil, salt, and pepper and roast at a high temperature (425°F) for about 20 minutes, or until they are tender and slightly caramelized.
  • Use fresh herbs: Fresh herbs like thyme, rosemary, or parsley add a delightful flavor to the roasted radishes. Chop them finely and sprinkle them over the crostini before serving.
  • Don't overcrowd the pan: When roasting the radishes, make sure not to overcrowd the pan. This will prevent them from roasting evenly and may result in soggy radishes.
  • Serve immediately: Roasted radish crostini are best served immediately after they are made. The radishes will lose their crispness and flavor if they sit for too long.
