Cayenne adds kick, brown sugar balances the salt and fresh rosemary provides an unexpected woodsy note that really makes them something special. They're fancy enough to toss into a shiny cellophane bag, tie with a bow and give as a gift.

Yield 2 cups

Number Of Ingredients 11

Nonstick cooking spray or vegetable oil
2 tablespoons egg white (1 extra-large egg)
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon chile powder
1/4 teaspoon ground cloves
Kosher salt and freshly ground black pepper
2 cups whole pecan halves (8 ounces)
1/2 teaspoon fleur de sel

Steps:

  • Preheat the oven to 300 degrees F. Spray a sheet pan with the cooking spray or brush it lightly with oil.
  • Place the egg white in a large bowl and whisk vigorously for 15 seconds, until light and frothy. Whisk in the brown sugar, vanilla, cinnamon, ginger, chile powder, cloves, 1 teaspoon kosher salt, and 1/2 teaspoon pepper. Add the pecans and mix well, until thoroughly coated. Pour the mixture, including any liquid, onto the prepared pan and spread in a single layer. Bake for 30 minutes, tossing twice with a metal spatula. Each time you toss the pecans, spread them out again in one layer. When they're done, sprinkle with fleur de sel and allow to cool completely; they will crisp as they cool. Serve at room temperature.

THE BEST ROASTED PECANS

The Best Roasted Pecans image

Sweet cinnamon-sugary pecans, hot from the oven! These taste just like the roasted pecans I get every summer at baseball games.

Provided by cookinmama

Time 1h

Yield 10

Number Of Ingredients 6

1 egg white
1 ½ pounds pecan halves
¾ cup white sugar

1 ¼ teaspoons ground cinnamon
2 tablespoons unsalted butter, softened

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C).
  • Beat egg whites until foamy in a large glass or metal mixing bowl until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak.
  • Mix the pecan halves into the egg white.
  • Stir the white sugar, brown sugar, and cinnamon together in a bowl; add to the pecan and egg white mixture and stir.
  • Coat the bottom of a jelly roll pan with the softened butter.

ROASTED PECANS WITH ROSEMARY AND SPICE

ROASTED PECANS WITH ROSEMARY AND SPICE image

Categories     Nut     Appetizer     Bake

Yield 12 servings

Number Of Ingredients 6

2 large egg whites
1/2 T sugar
2 T fresh rosemary, chopped fine
1 1/2 tsp. sea salt
1/4 tsp. cayenne pepper (or more!)
2 C whole pecan halves

Steps:

  • Preheat oven to 400 F. Line cookie pan with foil, coat with thin layer of oil (olive or vegetable). Whisk egg white in medium bowl until foamy. Add sugar, whisk again. Whisk in rosemary, salt and cayenne pepper. Pour into bag with nuts and toss until coated evenly. Spread nuts on the baking sheet, in a single layer. Bake until brown (about 15 minutes), stirring nuts after 8 minutes. Remove from oven and salt lightly, spoon nuts onto bread board to cool. The secret to the best nuts is to allow the outer edge to go to brown/black, partially carbonized. Personally I like the crispy ones!

Tips:

  • Choose fresh, high-quality pecans. Look for pecans that are plump, smooth, and free of blemishes. Avoid pecans that are shriveled or have dark spots.
  • Use a variety of spices to flavor your pecans. The spices in this recipe are just a suggestion. Feel free to experiment with other spices that you like, such as cinnamon, nutmeg, or ginger.
  • Roast the pecans until they are fragrant and slightly browned. This will take about 10-15 minutes. Be sure to watch the pecans closely so that they do not burn.
  • Let the pecans cool completely before storing them. This will help them to stay crispy.
  • Store the pecans in an airtight container at room temperature for up to 2 weeks. You can also freeze the pecans for up to 3 months.

Conclusion:

Roasted pecans with rosemary and spice are a delicious and versatile snack or ingredient. They can be enjoyed on their own, or added to salads, yogurt, or trail mix. They also make a great gift for friends and family. So next time you're looking for a healthy and tasty snack, reach for a handful of roasted pecans with rosemary and spice. You won't be disappointed!
