Roasted pear puree, recipe follows
1 bottle pear nectar
1 (750-ml) bottle Champagne
2 pears
1 tablespoon honey

Drizzle both with the honey and loosely wrap them in the foil, leaving the top open. Place the pears in the top half of the oven and roast until they are buttery soft, about 50 to 60 minutes. Remove from the oven and let cool. Peel the skin off with your hands and pull the flesh away from the core. Place in a blender with any accumulated juices and puree until smooth. PEAR BELLINI

Categories     beverage

Time 10m

Yield 6 drinks

Number Of Ingredients 2

One 15-ounce can pear halves in syrup or juice
1 bottle sparkling rose wine or Champagne, chilled

Steps:

  • Strain the pears; reserve the liquid. Add the pears to a blender along with 2 tablespoons of the reserved liquid. Blend to a smooth puree.
  • Divide the pear puree between 6 champagne flutes. Top off with sparkling wine, and stir gently. Serve immediately.

Tips:

  • Choose ripe pears: Use ripe, firm pears for the best flavor and texture. Bosc or Anjou pears are good choices.
  • Roast the pears before muddling: Roasting the pears intensifies their flavor and makes them easier to muddle.
  • Use fresh lemon juice: Fresh lemon juice adds a bright, citrusy flavor to the bellini. Use bottled lemon juice if you don't have fresh lemons on hand.
  • Chill the prosecco: Prosecco should be chilled before using to keep the bellini cold and refreshing.
  • Serve immediately: Bellinis are best served immediately after they are made. The longer they sit, the more the flavors will fade.

Conclusion:

Roasted Pear Bellinis are a delicious and refreshing cocktail that is perfect for any occasion. They are easy to make and can be tailored to your own taste preferences. Whether you like your bellinis sweeter or tarter, you can adjust the amount of sugar or lemon juice to suit your taste. Garnish with a pear slice or a twist of lemon for a festive touch. Enjoy!
