We make our version with an oven-roasted tomato sauce, crispy chicken cutlets and three kinds of cheese.

2 pounds ripe tomatoes (4 to 5 large tomatoes), cored
4 cloves garlic
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
Red pepper flakes, to taste
1 teaspoon dried oregano
2 tablespoons tomato paste
10 basil leaves
1 teaspoon sugar
1 pound boneless, skinless chicken breasts (2 breasts)
Canola oil, for cooking
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
4 eggs, beaten
1 1/2 cups panko
1/2 cup grated Parmesan
4 tablespoons ricotta
4 ounces shredded mozzarella
Fresh basil, for garnish

Steps:

  • Preheat the broiler.
