Categories     Potato     Side     Bake     Vegetarian     Quick & Easy

Yield 6

Number Of Ingredients 3

3 lbs small red new potatoes halved
1/4 cup olive oil (accidentally used garlic olive oil and YUM)
1 tsp salt and pepper

Steps:

  • Adjust oven rack to lowest portion and heat oven to 450 degrees. Toss potatoes with oil, salt and pepper Arrange, cut side down, on a large lipped cookie sheet or similar pan. Roast until tender and golden brown, about 30 minutes (check after 20 minutes)

Tips:

  • Choose the right potatoes: Look for new red potatoes that are small, firm, and have smooth skin. Avoid any potatoes that are bruised or have blemishes.
  • Wash the potatoes thoroughly: Scrub the potatoes gently with a vegetable brush to remove any dirt or debris.
  • Cut the potatoes into even-sized pieces: This will help them cook evenly. If the potatoes are too large, they may not cook through.
  • Toss the potatoes with oil and seasonings: This will help them brown and develop flavor. You can use olive oil, avocado oil, or melted butter. Season the potatoes with salt, pepper, garlic powder, and any other herbs or spices you like.
  • Roast the potatoes at a high temperature: This will help them get crispy on the outside and tender on the inside. The ideal roasting temperature is 425 degrees Fahrenheit.
  • Don't overcrowd the pan: Make sure the potatoes are in a single layer on the baking sheet. If they are too crowded, they will steam instead of roast.
  • Roast the potatoes until they are tender: This will take about 20-25 minutes. You can check the potatoes by piercing them with a fork. If the fork goes through easily, they are done.
  • Serve the potatoes immediately: Roasted potatoes are best enjoyed hot out of the oven. You can garnish them with fresh herbs or a sprinkle of cheese.

Conclusion:

Roasted new red potatoes are a delicious and easy side dish that can be enjoyed with a variety of meals. They are perfect for weeknight dinners, potlucks, and holiday gatherings. With just a few simple ingredients and a little bit of time, you can make roasted new red potatoes that are sure to impress your family and friends.
