GARLIC BUTTER ROASTED MUSHROOMS
Recipe video above. Here's a simple, incredibly delicious way to roast mushrooms: tossed in garlic butter then roasted on a high temp to make them golden brown on the outside whilst keeping them juicy on the inside. The addition of olive oil stops the butter from burning and also adds a touch of extra flavour - but the dominant flavour is still butter (and garlic!). The lemon and thyme finishing touch is optional - it's terrific plain - it's an extra flavour option.Serves 2 as a main, 4 - 5 as a side.

Transform bland mushrooms into a flavorful side dish to accompany your favorite protein. My favorite way to serve these is with a juicy grilled ribeye.

Steps:
- Preheat the oven to 400 degrees F.
- Add the mushrooms, melted butter, olive oil, salt, pepper, sliced garlic, rosemary sprigs and thyme sprigs to a 9-by-13-inch baking dish. Toss the ingredients together until evenly combined.
- Bake until the mushrooms are softened and slightly browned, 30 to 35 minutes. Remove the pan from the oven and discard the rosemary and thyme sprigs.
- Serve immediately or keep at room temperature until ready to serve.
Tips:
- Choose the right mushrooms. For roasting, it's best to use mushrooms that are firm and have a meaty texture. Some good options include cremini, portobello, shiitake, and oyster mushrooms.
- Slice the mushrooms evenly. This will help them cook evenly. If the mushrooms are too thick, they may not cook through in the center or may burn on the outside.
- Toss the mushrooms with oil and seasonings. This will help them to brown and develop flavor. You can use olive oil, avocado oil, or another high-heat cooking oil. As for seasonings, salt and pepper are a good starting point, but you can also add herbs, spices, or a squeeze of lemon juice.
- Roast the mushrooms at a high temperature. This will help them to caramelize and develop a rich flavor. The ideal temperature for roasting mushrooms is 425°F (220°C).
- Roast the mushrooms until they are tender. The cooking time will vary depending on the type of mushrooms you are using, but they should be tender enough to pierce with a fork. For cremini and portobello mushrooms, this usually takes about 15-20 minutes.
- Serve the mushrooms immediately. Roasted mushrooms are best served hot out of the oven. They can be served as a side dish, appetizer, or even as a main course.
Conclusion:
Roasted mushrooms are a delicious and versatile dish that can be enjoyed in many different ways. They are a great way to add flavor and texture to your meals, and they are also a good source of nutrients. Next time you are looking for a simple but flavorful dish, give roasted mushrooms a try. You won't be disappointed.
