1 pound green tomatoes, cored and cut into chunks
1 medium yellow onion, cut into chunks
2 medium jalapeno peppers, cut in half lengthwise and seeded
½ large green bell pepper, top and seeds removed
3 cloves garlic
1 tablespoon olive oil
¾ cup fresh cilantro
2 tablespoons lime juice
1 teaspoon kosher salt
½ teaspoon ground cumin
ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment.

3 ripe tomatoes (red, orange or yellow; about 1 1/4 pounds)
1 small red onion, diced fine
1 1/2 teaspoons minced roasted garlic
3 -4 jalapeno peppers (or to taste)
1/4 cup chopped fresh cilantro
1/2 teaspoon salt (or to taste)
