Steps:
- Preheat oven to 450°F. Spray 2 heavy large baking sheets with vegetable oil spray. Arrange onions in single layer on prepared sheets.
- Dot onions with 4 tablespoons butter, dividing equally. Season with salt and pepper. Bake until onions are dark brown on bottom, about 35 minutes.
- Meanwhile, boil broth in heavy large skillet over high heat until reduced to 1/2 cup, about 6 minutes. Add sugar and vinegar and whisk until sugar dissolves and mixture comes to boil.
- Add onions to sauce; reduce heat to medium-low. Simmer until liquid is slightly reduced, about 5 minutes. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over low heat before continuing.)
- Cook green beans in large pot of boiling salted water until crisp-tender, about 5 minutes. Drain well. Return beans to same pot. Add remaining 2 tablespoons butter and toss to coat. Mound beans in large shallow bowl. Top with onion mixture and serve.
Tips:
- Choose fresh, tender green beans: Look for beans that are bright green in color and have no blemishes. Thicker beans will have a longer cooking time but will retain their shape better. If using frozen beans, thaw them before cooking.
- Trim the green beans: Remove the tough ends of the green beans. You can do this by snapping them off or using a knife.
- Roast the green beans at a high temperature: This will help them to caramelize and develop a slightly crispy texture. Toss the green beans with olive oil, salt, and pepper before roasting.
- Add aromatics to the roasting pan: Aromatics such as garlic, shallots, and onions will add flavor to the green beans. You can also add herbs such as thyme or rosemary.
- Roast the green beans until they are tender-crisp: The green beans should be tender but still have a slight crunch to them. The cooking time will vary depending on the thickness of the green beans.
- Serve the green beans immediately: Roasted green beans are best served immediately. You can garnish them with chopped walnuts, Parmesan cheese, or a squeeze of lemon juice.
Conclusion:
Roasted green beans with onions and walnuts is a simple but delicious side dish that can be enjoyed with a variety of meals. The green beans are roasted until tender-crisp and then tossed with caramelized onions, walnuts, and a balsamic vinaigrette. This dish is a great way to get your daily dose of vegetables and it's also a good source of fiber and protein.
