Steps:
- 1. Heat oven to 425°. 2. Slice off top third of the garlic and discard. Wrap garlic in foil and roast 40 minutes. Let cool. Unwrap and squeeze roasted garlic into small bowl. Set aside. Discard skin. 3. Heat oil in medium skillet over medium-high heat. Add onion and cook, stirring, until translucent, 5 minutes. Transfer to slow cooker. Add next 6 ingredients and 2/3 of the reserved garlic (chill remaining garlic). 4. Cover and cook until potatoes are tender, 4 to 6 hours on low. Add basil and season to taste. Serve soup with remaining garlic to spread on crusty bread.
Tips:
- Choose the right vegetables: Use a variety of vegetables to create a flavorful and colorful soup. Some good options include carrots, celery, onions, potatoes, and broccoli.
- Roast the vegetables: Roasting the vegetables before adding them to the soup intensifies their flavor and gives them a slightly caramelized texture.
- Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality one. Look for a broth that is made with fresh vegetables and herbs.
- Add some herbs and spices: Herbs and spices can help to enhance the flavor of the soup. Some good options include thyme, rosemary, oregano, and garlic powder.
- Don't overcook the vegetables: The vegetables should be cooked until they are tender, but not mushy. Overcooked vegetables will make the soup bland.
- Serve the soup hot: Roasted garlic vegetable soup is best served hot. You can garnish it with a dollop of sour cream, a sprinkle of chopped parsley, or a drizzle of olive oil.
Conclusion:
Roasted garlic vegetable soup is a delicious and healthy meal that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With its roasted garlic flavor and colorful vegetables, this soup is sure to be a hit with everyone at your table.
