ROASTED BROCCOLI W LEMON GARLIC & TOASTED PINE NUTS

Roasted Broccoli W Lemon Garlic & Toasted Pine Nuts image

I adopted this recipe when another chef left the site. The text from my original review stated, "I just made this for my lunch. Yum! I had a smaller portion of broccoli, and therefore downsized the recipe. The flavors are awesome together. I used all fresh ingredients (no bottled lemon juice here!). Since I was cooking only for myself, I prepared the lemon garlic butter in a small saute pan and then tossed the broccoli in that pan to coat it. (No need to dirty a serving dish for just me!) I can't wait to prepare this for others. The lemon garlic butter lends this to be a great side for fish...I am thinking grilled salmon would be great." I have since prepared this as a side dish for a multitude of meals. I love the broccoli, lemon, garlic combo.

ROASTED BROCCOLI WITH LEMON GARLIC BUTTER

ROASTED BROCCOLI WITH LEMON GARLIC BUTTER image

I got this recipe and photo straight from www.Schwan's.com. I thought it would make a great Thanksgiving side dish. Can't go wrong with broccoli mixed with lemon and garlic--yum!

Provided by Ellen Bales

Categories     Vegetables

Time 45m

Number Of Ingredients 8

1 pkg (1.5#) broccoli florets, frozen
3 Tbsp olive oil
2 Tbsp butter
2 tsp minced garlic
2 Tbsp fresh lemon juice
1/2 tsp lemon zest
salt and pepper to taste
1 tsp pine nuts

Steps:

  • 1. In a large bowl, mix together broccoli, oil, butter, garlic, lemon juice, zest, and salt and pepper until well blended.
  • 2. Place mixture in a single layer on a baking sheet sprayed lightly with cooking oil.
  • 3. Bake in a preheated 450-degree oven for 20-25 minutes, stirring halfway through cooking time.
  • 4. Garnish with pine nuts and serve.

Tips:

  • Choose the right broccoli: Look for broccoli crowns that are deep green in color and have tightly closed florets. Avoid crowns that are yellowing or have loose, open florets.
  • Roast the broccoli at a high temperature: This will help to caramelize the florets and give them a slightly crispy texture. If you roast the broccoli at too low a temperature, it will become mushy.
  • Use a variety of seasonings: Garlic, lemon, and Parmesan cheese are all classic seasonings for roasted broccoli, but you can also experiment with other herbs and spices, such as rosemary, thyme, or paprika.
  • Don't overcrowd the pan: When you roast the broccoli, make sure to spread it out in an even layer on the pan. If you overcrowd the pan, the broccoli will steam instead of roast.
  • Roast the broccoli until it is tender: The broccoli is done roasting when it is tender when pierced with a fork. Be careful not to overcook the broccoli, or it will become mushy.

Conclusion:

Roasted garlic lemon broccoli is a delicious and healthy side dish that can be enjoyed by people of all ages. It is a great way to get your daily dose of vegetables, and it is also a good source of vitamins and minerals. If you are looking for a tasty and nutritious side dish, roasted garlic lemon broccoli is a great option.
