ROASTED GREEN BEANS WITH GARLIC AND PINE NUTS

Roasted Green Beans With Garlic and Pine Nuts image

I really LOVE green beans, and this recipe is yet another tasty way to serve them. I belive the recipe called for whole garlic cloves, but I like to smash them with the back of my knife to 1) get the peels off and 2) release some of that wonderful garlic flavor. I enjoy these beans right out the oven as is, but if you're like my husband, go ahead and add the couple tbsp of the vinegar of your choice before serving. These taste great right from the oven, or at room temp.

Tips:

  • Use fresh green beans: Fresh green beans have a crisp texture and vibrant color, which makes them ideal for roasting. If you can't find fresh green beans, frozen green beans can be used as a substitute.
  • Roast the garlic: Roasting the garlic mellows its flavor and makes it sweet and caramelized. To roast the garlic, simply cut off the top of the garlic head, drizzle it with olive oil, and roast it in the oven until it is soft and golden brown.
  • Use a variety of nuts: In addition to cashews, other nuts such as almonds, walnuts, or pecans can be used in this recipe. Choose nuts that are unsalted and roasted for the best flavor.
  • Season the green beans well: Salt, pepper, and garlic powder are all essential seasonings for roasted green beans. You can also add other spices, such as chili powder, cumin, or paprika, to taste.
  • Serve immediately: Roasted green beans are best served immediately after they are cooked. This will ensure that they are still crispy and flavorful.

Conclusion:

Roasted garlic green beans with cashews is a delicious and healthy side dish that is perfect for any occasion. The roasted garlic adds a sweet and caramelized flavor to the green beans, while the cashews provide a crunchy texture and a nutty flavor.
