1 lemon, juice only
4 fluid ounces olive oil
2 garlic cloves, pressed
1 1/2 teaspoons dried thyme
3 teaspoons dried rosemary
2 bay leaves
1 -2 teaspoon crushed red pepper flakes

2 Cornish hens
unsalted butter, melted

Steps:

  • Split the hens and remove the ribs and backbone.
  • Combine all above except butter and marinate the hens for 2 to 6 hours.

Kosher salt and freshly ground pepper
3 medium carrots, peeled and quartered lengthwise
1/2 small celery root, peeled and cut into 1/2-inch matchsticks
2 tablespoons extra-virgin olive oil
1 teaspoon Dijon mustard, plus more for serving
2 tablespoons fresh lemon juice
2 teaspoons capers in brine, drained and coarsely chopped
