ROASTED EGGPLANT CAPRESE SALAD RECIPE

Roasted Eggplant Caprese Salad Recipe image

A little embellishment on the classic Caprese salad, this roasted eggplant Caprese is a filling and delicious appetizer with a special basil vinaigrette. Exceptional!

Provided by The Mediterranean Dish

Categories     Appetizer

Time 50m

Number Of Ingredients 13

1 eggplant, sliced into 1/2-inch rounds
Salt
3 large or steak tomatoes, sliced into 1/2-inch rounds
Extra virgin olive oil
20 basil leaves, more for the dressing
16 Oz. fresh mozzarella cheese, sliced
Basil Vinaigrette (optional)
1 small garlic clove, chopped
1 cup packed basil leaves
1/4 cup extra virgin olive oil
1/2 tbsp lime juice
Pinch crushed red pepper
Salt and pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Spread the eggplant slices on a large tray and sprinkle generously with salt. Leave for 30 minutes; the eggplant will "sweat out" it's bitterness. When ready, pat the eggplant dry.
  • Place the eggplant slices and the tomato slices on a large baking sheet. Drizzle with olive oil. Roast in the 425 F degree heated-oven for 10-15 minutes. Remove from the oven, but leave the oven on for step # 5.
  • When the eggplant and tomatoes are cool enough to handle, bring a small baking dish (about 6"x 9") and begin to assemble the Caprese salad. Arrange the eggplant, tomato, cheese and basil in the baking dish forming a tight row. Repeat the pattern (as you see in the tutorial picture below) until you fill the baking dish side-to-side.
  • If you like, place the baking dish in the oven to heat for 7-10 minutes (just until the cheese melts slightly).
  • While the Caprese salad warms up, make the basil vinaigrette. In a small food processor, blend the chopped garlic with the basil leaves, olive oil, lime juice and spices.
  • When ready, remove the roasted eggplant Caprese salad from the oven and spoon some of the basil vinaigrette on top. Place the extra basil vinaigrette in a bowl to serve next to the salad. Slice a loaf of crusty bread to serve along. Enjoy!

EGGPLANT ROULADES WITH GARLIC GOAT CHEESE AND ROASTED TOMATOES

Eggplant Roulades with Garlic Goat Cheese and Roasted Tomatoes image

This is one of my favorite dishes for entertaining. The tender roasted eggplant sheets are used like cannelloni pasta and rolled around the savory cheese filling. The sweet roasted tomatoes add just enough acidity. If you are short on time, fresh tomatoes marinated in oil and vinegar are a great alternative. If you want to get fancy, secure each bundle with a blanched chive for a beautiful presentation.

Yield makes 4 servings as a side dish or 2 as a main course

Number Of Ingredients 18

4-6 roma tomatoes, cored and cut in half lengthwise
2 tablespoons olive oil
2 garlic cloves, thinly sliced
Salt and pepper
Crushed red pepper flakes
6 sprigs fresh herbs, such as thyme and rosemary
1/4 cup Garlic Confit (p. 193)
1/2 cup fresh goat cheese, softened
Salt and pepper, to taste
2 tablespoons olive oil
1 teaspoon lemon juice
1/2 teaspoon ground cumin
Salt and pepper
1 large eggplant (about 1-1 1/4 ounces), peeled and sliced lengthwise into 1/4-inch slices (should make 8 usable slices)
Baked eggplant
Garlic Goat Cheese
8 blanched chives (see blanching technique, p. 118), to secure roulades, optional
Roasted Tomatoes

Steps:

  • Preheat the oven to 300°F.
  • In a small bowl, toss the tomatoes with the olive oil, garlic, seasonings, and herbs. Lay the tomatoes cut side up on a baking sheet and roast for about 45 minutes to an hour, or until the tomatoes look slightly dehydrated and the skins are wrinkled. Let the tomatoes cool to room temperature, then transfer them to a bowl or storage container (be sure to include any of the richly flavored tomato oil that's left on the baking sheet). These can be prepared up to 2 days in advance and kept covered in the refrigerator (bring to room temperature before using). You may keep the tomato halves whole or chop them up.
  • Place the Garlic Confit and the softened goat cheese in a small bowl and mash with a fork. Taste and adjust seasonings. Set aside until the eggplant is ready. The garlic goat cheese can be prepared the day before, but remove it from the refrigerator to soften before assembling the dish.
  • Preheat the oven to 400°F.
  • Combine the olive oil with the lemon juice, cumin, and a little salt and pepper.
  • Brush the eggplant slices on both sides with the seasoned oil and lay them out on a baking sheet. Bake about 5 minutes, then use a metal spatula to turn the slices and continue baking until eggplant is cooked through and is a light golden brown. Leave the oven turned on.
  • Remove the eggplant from the oven. Lower the oven to 350°F. Loosen the slices with a spatula and let them cool. Spread each slice with about 2 tablespoons of the goat cheese mixture and roll up from the smaller end to the larger. If you like, tie each roulade with a blanched chive. Place the roulades on a baking sheet and, when you're about ready to serve, return them to the oven for 10 minutes or until heated through. Serve the roasted tomatoes alongside the roulades.

EGGPLANT, SQUASH AND TOMATO WITH ROASTED GARLIC VINAIGRETTE

Eggplant, Squash and Tomato with Roasted Garlic Vinaigrette image

Yield Serves 6

Number Of Ingredients 8

4 large garlic cloves, unpeeled
Olive oil
1 1/2 tablespoons balsamic vinegar or red wine vinegar
1/3 cup olive oil
3 large Japanese eggplants, cut crosswise into 1/2-inch-thick rounds
3 large yellow summer squash or zucchini, cut crosswise into 1/2-inch-thick rounds
3 tomatoes, thinly sliced
16 fresh basil leaves, chopped

Steps:

  • Preheat oven to 350°F. Place unpeeled garlic cloves in small baking dish. Drizzle garlic with olive oil and toss to coat. Roast garlic until very tender, about 25 minutes. Cool. Peel garlic and mince. Transfer to small bowl. Mix in balsamic vinegar. Gradually mix in 1/3 cup olive oil. Set dressing aside.
  • Preheat broiler. Arrange eggplant slices in single layer on broiler pan. Brush both sides with olive oil. Sprinkle with salt and pepper. Broil until beginning to brown, about 4 minutes per side. Arrange squash slices in single layer on broiler pan. Brush tops of squash with olive oil; season with salt and pepper. Broil until tops begin to brown, about 4 minutes.
  • Alternate eggplant and squash slices around edge of serving platter, overlapping slightly. Arrange tomato slices in center of platter. Sprinkle tomatoes with salt and pepper. Drizzle dressing over salad. (Salad can be prepared 2 hours ahead. Cover and let stand at room temperature.) Sprinkle salad with chopped fresh basil and serve.

Tips:

  • To choose the best eggplant, look for one that is firm and heavy for its size, with smooth, unblemished skin.
  • When roasting the eggplant, use a high temperature (450°F) to caramelize the edges and bring out its smoky flavor.
  • If you don't have a grill, you can also roast the eggplant in the oven. Just preheat the oven to 450°F and roast the eggplant for 20-25 minutes, or until it is tender and slightly charred.
  • For the salad dressing, use a good quality olive oil and red wine vinegar. You can also add a touch of honey or agave syrup to balance out the acidity of the vinegar.
  • If you don't have any fresh garlic on hand, you can use 1/4 teaspoon of garlic powder instead.
  • For a vegetarian version of this salad, omit the anchovies.

Conclusion:

This roasted eggplant and garlic salad with tomatoes is a delicious and healthy dish that is perfect for summer gatherings. The roasted eggplant is smoky and flavorful, the tomatoes are sweet and juicy, and the garlic adds a nice pungent kick. The salad is also very versatile and can be served as a side dish, a main course, or even as a dip. So next time you're looking for a new and exciting way to enjoy eggplant, give this salad a try!
