ROASTED CUMIN CASHEWS

Roasted Cumin Cashews image

We love these cashews. They are so good. I usually have to make 5-6 batches every year for Christmas, but have not been able to for a couple years, as I had lost the recipe. While moving this fall, I found my recipe, so I am posing this here so that I won't miss place it again. They are a nice change from just plain salted cashews.

Yield Makes 2 cups

Number Of Ingredients 6

Nonstick vegetable oil spray
2 cups unsalted natural cashews (about 10 ounces)
1/4 cup pure maple syrup (preferably Grade B)
1 1/2 teaspoons cumin seeds
1 teaspoon fine sea salt
1/2 teaspoon cayenne pepper

Steps:

  • Preheat oven to 350°F. Spray sheet of foil with nonstick spray; set aside. Lightly spray rimmed baking sheet with nonstick spray. Toss cashews and all remaining ingredients in medium bowl. Spread cashew mixture evenly in single layer on prepared sheet.
  • Bake nuts until golden brown and coated with maple syrup mixture, stirring occasionally, about 20 minutes. Immediately pour nut mixture out onto foil, spreading evenly. Cool 10 minutes, then separate and break apart any nut clusters. Cool completely. DO AHEAD: Can be made 3 days ahead. Store airtight at room temperature.

Tips:

  • Choose high-quality cashews: Look for cashews that are plump, whole, and free of blemishes. Avoid cashews that are broken or discolored.
  • Roast the cashews before adding the cumin mixture: This will help to bring out their flavor and make them more crispy.
  • Use a light hand with the cumin: A little bit of cumin goes a long way. Too much cumin can overwhelm the flavor of the cashews.
  • Be careful not to overcook the cashews: They should be golden brown and crispy, but not burnt.
  • Store the roasted cumin cashews in an airtight container: This will help them to stay fresh and crispy for up to 2 weeks.

Conclusion:

Roasted cumin cashews are a delicious and versatile snack that can be enjoyed on their own or added to salads, stir-fries, and other dishes. They are also a good source of protein, fiber, and healthy fats. So next time you are looking for a healthy and tasty snack, give roasted cumin cashews a try!
