Time 40m

Yield 4 serving(s)

Number Of Ingredients 6

1 fresh anaheim chili
4 ears fresh corn, husked or 2 cups frozen corn kernels
3 cups low sodium vegetable broth
4 ounces firm tofu, drained, cut into 1/4-inch cubes
1/4 cup chopped fresh cilantro
2 limes, cut into wedges

Steps:

  • Using tongs, hold chile directly over flame of gas burner, turning frequently, until entire surface is blistered. (Alternatively, roast chile under broiler.) Place roasted chile in medium bowl. Remove and discard seeds. Finely chop chile flesh; set aside.

  • Break reserved cobs in half. In large saucepan, combine broth and cobs. Bring to a boil. Reduce heat, cover and simmer 15 minutes. Discard cobs.
  • In food processor or blender, combine reserved corn kernels and broth and process, in batches if necessary, until very smooth. Strain through fine-mesh sieve back into saucepan, using a rubber spatula to press mixture through mesh. Stir in tofu, reserved chopped chile, and salt and pepper to taste. Rewarm over low heat, stirring occasionally.
  • Ladle soup into bowls and garnish each serving with cilantro. Serve with lime wedges if desired.

ROASTED GREEN CHILE AND CORN CHOWDER

Roasted Green Chile and Corn Chowder image

I absolutely love the green chile corn chowder soup they have at Sweet Tomatoes, so I found this recipe to suffice my cravings. I like roasting the corn and chiles before adding them to the soup. I do this by throwing them into the oven at 450 degrees for 20 - 30 minutes, or until the skins of the peppers start charring and wilting, and the corn browns. I enjoy poblano and anaheim peppers in this recipe. This is a filling soup, but pairs nicely with grilled salmon.

Tips:

  • Select the Right Corn: Choose fresh, plump ears of corn with bright green husks and tightly packed kernels. Avoid ears with brown or damaged kernels.
  • Roast the Corn Properly: To achieve a smoky and caramelized flavor, roast the corn directly over an open flame or on a hot grill until the kernels are slightly charred. Alternatively, you can roast the corn in a preheated oven at 400°F for 20-25 minutes.
  • Use Fresh Green Chilies: Fresh green chilies add a vibrant flavor and a touch of heat to the soup. You can adjust the amount of chilies depending on your desired level of spiciness.
  • Sauté the Vegetables: Sautéing the onions, garlic, and poblano peppers in butter or olive oil enhances their flavor and creates a flavorful base for the soup.
  • Use a Good Quality Broth: Choose a flavorful broth, such as chicken or vegetable broth, to provide a solid foundation for the soup. You can also use water, but the flavor will be less rich.
  • Simmer the Soup: Simmer the soup over medium heat for at least 20 minutes to allow the flavors to meld and develop. This will result in a more flavorful and satisfying soup.
  • Season to Taste: Season the soup with salt and pepper to taste, and add any additional herbs or spices, such as cumin or chili powder, according to your preference.

Conclusion:

This roasted corn and green chili soup is a delicious and easy-to-make dish that showcases the flavors of fresh corn and green chilies. Whether you're looking for a comforting meal on a cold day or a light and refreshing lunch, this soup is sure to satisfy.
