ROASTED CINNAMON CHICKEN

Roasted Cinnamon Chicken image

Our family eats a chicken every other weekend so sometimes it is challenging to find new ways of roasted chicken. This idea nailed it. Delicious, juicy, interesting. Tummies were full and my daughter even asked for second serving - VERY rare. Great with couscous, raisins, and peeled almonds as a side dish.

1/2 teaspoon salt
1/2 teaspoon cracked black pepper
1 corn tortilla, cut in quarters
2 plum tomatoes, quartered lengthwise
1/4 white onion, chopped

  • Return to pan, bring to boil, add brown sugar and reduce heat to low and simmer for 15- 30 minutes to thicken.
  • Cut chicken into pieces, add back to sauce to warm.

Tips:

  • To ensure even cooking, use a roasting pan that is large enough to accommodate the chicken without crowding.
  • If you don't have a roasting pan, you can use a baking sheet lined with parchment paper.
  • Roast the chicken breast-side up for the first 30 minutes, then flip it over and roast it breast-side down for the remaining 30 minutes.
  • Use a meat thermometer to check the internal temperature of the chicken. It should reach 165 degrees Fahrenheit before you remove it from the oven.
  • Let the chicken rest for 10 minutes before carving it. This will help the juices redistribute throughout the meat.

Conclusion:

Roasted cinnamon chicken is a simple but flavorful dish that is perfect for a weeknight meal. It is easy to prepare and can be customized to your liking. With its crispy skin, tender meat, and sweet and savory sauce, this dish is sure to please everyone at the table.
