Chicken breast marinated in chili-lime marinade and roasted to juicy perfection!

Provided by lyuba

Categories     dinner     Main Course

Number Of Ingredients 8

2 large chicken breasts on bone
1/2 cup olive oil
1 tsp chile powder (I used Ancho Chile Powder)
1 jalapeno (seeded and minced)
1 tsp fresh minced cilantro
2 garlic cloves (grated)
1 large lime
salt to taste

Steps:

  • Preheat the oven to 350.
  • Slice half the lime in thin slices to be added to the chicken, then zest and juice the remaining half for the marinade. Whisk all ingredients, except chicken, in a large mixing bowl.
  • Add chicken breasts and coat them in the mixture very well. Try to get some of the mixture under the skin so the flavors cook through more.
  • Marinade chicken breasts for about 15 minutes.
  • Place on a seasoned cast iron skillet (you can use a baking dish as well, or a roasting pan), spread the marinade over chicken and bake for 60-75 minutes, depending on the size of chicken breasts. Cut into the thickest part of the chicken and press lightly. If juice runs out clear, it's ready.

CHILI LIME CHICKEN

Chili Lime Chicken image

This recipe combines many of the spices that I grew up with and that have become a distinctive part of much of my cooking including dishes such as chili Colorado, posole, and Frontera™ style carne asada. I would describe this dish as more Tex-Mex or New Mexican than Mexican. Serve on a bed of rice or slice thinly for use in tacos or to top a green salad.

Chili-Lime Chicken with Corn and Black Beans image

Here, tender chicken breast is seasoned with a flavorful chili-lime rub, then skillet cooked and served atop a saute of hearty black beans, sweet corn, and fresh tomatoes warmed until barely bursting. It is made savory and given a gentle heat with onion, garlic, and a kiss of jalapeno. (If you like a lot of heat, feel free to add more jalapeno and/or more cayenne in the rub for the chicken.) CHILI-LIME CHICKEN FAJITAS

Chili-Lime Chicken Fajitas image

I like to use my cast-iron skillet for this lime chicken fajitas recipe because it gives the dark sear that flavors the fajitas. If you don't have cast iron, a different pan will work just fine. We go pretty simple with our fajita toppings: lime wedges, cheese and a little sour cream, but you can add anything that you wish. -Ashley Lecker, Green Bay, Wisconsin

A little sweet, a little spicy and very citrusy, this easy chicken recipe hits all the right notes, making it the kind of weeknight dinner you'll put on repeat. Time 50m

Yield 4 servings

Number Of Ingredients 10

3 pounds bone-in, skin-on chicken thighs and drumsticks (to substitute breasts, see Tip)
Salt and black pepper
2 large garlic cloves, finely grated or crushed to a paste
1 tablespoon honey
1 tablespoon extra-virgin olive oil, plus more for drizzling
1/4 teaspoon red-pepper flakes, plus more for serving
2 fresh rosemary sprigs
1 lemon, preferably a Meyer lemon, thinly sliced and seeded
2 ounces feta, crumbled into large pieces (a heaping 1/2 cup)
Chopped mint, dill or parsley, for serving

Steps:

  • Season chicken all over with salt and pepper. In a large bowl, mix together garlic, honey, olive oil and 1/4 teaspoon red-pepper flakes. Add chicken and toss well with your hands, spreading the garlic paste all over the chicken pieces. (Don't worry if the honey is a little clumpy.) Add rosemary sprigs and lemon slices and toss to combine. Let marinate at room temperature for 30 minutes, or up to 8 hours in the refrigerator.
  • Heat oven to 425 degrees. Line a sheet pan with a silicone liner or parchment paper.
  • Spread chicken and lemons across a single layer in the lined pan, tucking in the rosemary sprigs. Drizzle oil generously over everything. Roast for 20 minutes.
  • Using tongs, turn over the chicken pieces, and give the lemons a stir. Sprinkle feta on top. Continue to bake for 20 to 25 minutes longer, until the chicken is deeply bronzed and cooked through, and an instant-read thermometer inserted into the thickest part of the thigh or drumstick registers 165 degrees. Serve garnished with chopped herbs and more red-pepper flakes, if you like.

Tips:

  • Choose the right chiles: Poblano and Anaheim chiles are mild and have a slightly sweet flavor, making them a good choice for this recipe. If you prefer a spicier dish, you can use jalapeño or serrano chiles. Just be sure to remove the seeds and ribs before roasting, as this is where most of the heat is concentrated.
  • Roast the chiles properly: Roasting the chiles brings out their smoky, slightly sweet flavor. To roast the chiles, place them on a baking sheet and broil them for 10-12 minutes, turning them once halfway through. The chiles should be charred and blistered but not burnt.
  • Make sure the chicken is cooked through: To ensure that the chicken is cooked through, use a meat thermometer to check that the internal temperature has reached 165°F (74°C). If the chicken is not cooked through, it can be dangerous to eat.
  • Serve with your favorite sides: This roasted chile-lime chicken is delicious served with a variety of sides. Some popular options include rice, beans, tortillas, and guacamole.

Conclusion:

This roasted chile-lime chicken is a flavorful and easy-to-make dish that is perfect for a weeknight meal. The combination of roasted chiles, lime juice, and spices gives the chicken a delicious smoky, citrusy flavor. Serve it with your favorite sides for a complete and satisfying meal.
