Yield 8 servings

Number Of Ingredients 9

1 1/2 pounds orange or yellow bell peppers (about 4) or sweet orange peppers (about 6), thinly sliced into rings
1 small torpedo or red onion, thinly sliced into rings
2 tablespoons Sherry vinegar or red wine vinegar
Kosher salt, freshly ground pepper
1/4 cup coarsely chopped fresh basil
1/4 cup chopped fresh chives
1/4 cup coarsely chopped fresh flat-leaf parsley
1/4 cup coarsely chopped fresh mint
2 tablespoons olive oil

Steps:

  • Toss bell peppers, onion, and vinegar in a large bowl; season with salt and black pepper.
  • Let sit until bell peppers are slightly softened, 10-20 minutes. Just before serving, toss herbs and oil with bell pepper mixture.

Tips:

  • For a crispy skin on the chicken, make sure to pat it dry before roasting and rub it with a mixture of olive oil, salt, and pepper.
  • Roast the chicken at a high temperature (425°F) for the first 20 minutes to get a golden brown color, then reduce the temperature to 350°F to finish cooking.
  • To prevent the vegetables from burning, toss them with a little olive oil and season them with salt and pepper before roasting.
  • If you don't have time to roast the vegetables, you can use a grill pan or sauté them in a skillet instead.
  • For a more flavorful salad, use a variety of bell peppers, such as red, yellow, and orange.
  • Add some crumbled feta cheese or goat cheese to the salad for a creamy touch.
  • Serve the salad warm or at room temperature.

Conclusion:

This roasted chicken, bell pepper, and onion salad is a delicious and healthy meal that is perfect for a weeknight dinner or a summer barbecue. The chicken is juicy and flavorful, the vegetables are roasted to perfection, and the dressing is light and tangy. This salad is also a great way to use up leftover chicken.
