Tips:

  • Choose small, tender carrots: Baby carrots or small carrots work best for this recipe as they cook evenly and quickly. If using larger carrots, cut them into 2-3 inch pieces.
  • Roast the carrots at a high temperature: This will help to caramelize the carrots and bring out their natural sweetness.
  • Use a good quality white wine: A dry white wine is best, such as a Sauvignon Blanc or Chardonnay. Avoid using cooking wine, as it can be too harsh.
  • Add the cumin seeds early in the cooking process: This will allow the cumin to toast and release its flavor.
  • Season the carrots to taste: Add salt, pepper, and additional cumin to taste before serving.

Conclusion:

Roasted carrots with cumin and white wine is a delicious and easy side dish that is perfect for any occasion. The carrots are tender and flavorful, with a slightly sweet and smoky flavor.
