ROASTED BRUSSELS SPROUTS WITH POTATOES AND BACON

Roasted Brussels Sprouts With Potatoes and Bacon image

This is a great vegetable dish if you like Brussels. I liked them, but hated the smell of the house after cooking them the usual way. I ran across this recipe in a magazine and thought that maybe they wouldn't smell so bad if they were roasted. I was right! These are yummy....even if you don't like Brussels. Give 'em a try! I know onions would work in place of shallots, especially a sweet onion. Also, I couldn't find baby Yukons, so cut mediums in pieces about the size of the Brussels.

Tips:

  • Choose the right Brussels sprouts: Look for firm, brightly colored sprouts with tightly closed leaves. Avoid any that are yellowed or wilted.
  • Trim the Brussels sprouts: Cut off the stem end of each sprout and remove any discolored or damaged outer leaves.
  • Parboil the Brussels sprouts: This helps to tenderize them and reduce their bitterness. Bring a large pot of salted water to a boil, add the Brussels sprouts, and cook for 3-4 minutes. Drain the sprouts and rinse them with cold water.
  • Roast the Brussels sprouts: Preheat your oven to 425°F (220°C). Toss the Brussels sprouts with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet and roast for 15-20 minutes, or until they are tender and slightly browned.
  • Add other vegetables: Feel free to add other vegetables to this dish, such as potatoes, carrots, or parsnips. Just be sure to adjust the cooking time accordingly.
  • Experiment with different seasonings: In addition to salt and pepper, you can season the Brussels sprouts with a variety of herbs and spices. Some good options include garlic powder, onion powder, paprika, or thyme.

Conclusion:

Roasted Brussels sprouts with potatoes and bacon is a delicious and easy-to-make side dish that is perfect for any occasion. The Brussels sprouts are tender and flavorful, the potatoes are crispy and golden brown, and the bacon adds a smoky, savory flavor. This dish is sure to be a hit with everyone at your table.
