SPICY ROASTED SHRIMP AND BROCCOLI RABE

This dish uses one of my favorite techniques for cooking just about anything quickly: high-heat roasting. All you do is spread seasoned protein and vegetables out on one rimmed baking sheet and roast everything at the same time. Here I've paired shrimp with broccoli rabe, which cook in about 10 minutes flat.

Tips for Making Roasted Broccoli with Shrimp:

  • Choose the right broccoli: Look for broccoli with tightly closed florets and a deep green color. Avoid broccoli with yellow or brown spots, as this indicates that it is past its prime.
  • Wash the broccoli thoroughly: Before roasting, be sure to wash the broccoli thoroughly under cold water to remove any dirt or debris.
  • Cut the broccoli into even-sized florets: This will help ensure that the broccoli cooks evenly. Aim for florets that are about 1-2 inches in size.
  • Toss the broccoli with oil and seasonings: Before roasting, toss the broccoli florets with olive oil, salt, and pepper. This will help them to brown and develop flavor.
  • Roast the broccoli at a high temperature: Roasting the broccoli at a high temperature will help to caramelize the florets and give them a slightly charred flavor. Aim for a temperature of 425 degrees Fahrenheit.
  • Roast the broccoli until tender: The broccoli should be roasted for about 15-20 minutes, or until it is tender and slightly charred. Be sure to stir the broccoli halfway through roasting to ensure that it cooks evenly.
  • Add the shrimp: Once the broccoli is roasted, add the shrimp to the pan and cook until they are pink and opaque. This should take about 5-7 minutes.
  • Serve immediately: Roasted broccoli with shrimp is best served immediately. It can be enjoyed on its own or as a side dish with grilled chicken or fish.

Conclusion:

Roasted broccoli with shrimp is a simple and delicious dish that is perfect for a weeknight meal. It is packed with flavor and nutrients, and it can be made in just under 30 minutes.
