2 pounds medium to large red and yellow beets
Olive oil
Kosher salt and freshly ground black pepper
1 tablespoon honey
2 tablespoons butter
1/4 cup unsalted pistachios
1/2 cup creme fraiche
Zest of 1 lemon
1/4 cup chopped fresh mint
1/4 cup fresh flat-leaf Italian parsley leaves

Steps:

  • For the beets, preheat the oven to 400 degrees F.
  • Massage each beet with about a teaspoon of oil and season with salt and pepper. Individually wrap each beet in aluminum foil. Place the beets on a baking sheet and bake for about an hour, or until you can easily pierce them with a knife.
  • When the beets have cooled enough to handle but are still warm, unwrap them and rub them with a dry kitchen towel or paper towels to remove their skin. Cut the beets into quarters and allow to cool completely.

2 Anjou pears
3 to 4 tablespoons balsamic vinegar
Extra-virgin olive oil
Kosher salt
2 cups baby washed arugula
1/4 cup Marcona almonds, coarsely chopped
