This colorful and elegant side dish is so easy to make. I love making this with beets and shallots straight from our local farmers' market. Green onions or chives may be substituted for the shallot if you prefer.

1 cup water
2 tablespoons chopped drained capers
3/4 cup crumbled feta cheese (about 3 ounces)

Steps:

  • Peel 4 medium beets and cut into 1/2-inch pieces. Toss with 1 tablespoon olive oil, 1 teaspoon salt, and pepper to taste on a baking sheet. Roast at 450 degrees F, stirring once or twice, until tender, 35 minutes. Transfer to a bowl; toss with 4 chopped scallions and 2 teaspoons lemon juice. Top with crumbled feta.

Tips:

  • Choose the right beets: Look for beets that are small to medium in size and have smooth, unblemished skin. Avoid beets that are too large, as they may be woody.
  • Roast the beets properly: To ensure that the beets are evenly roasted, toss them in olive oil and salt before roasting. Roast them at a high temperature (425°F) for about 45 minutes, or until they are tender when pierced with a fork.
  • Let the beets cool before handling: Once the beets are roasted, let them cool slightly before peeling and slicing them. This will prevent the beets from staining your hands and clothes.
  • Use a variety of toppings: This salad is versatile and can be topped with a variety of ingredients. Some popular toppings include feta cheese, goat cheese, walnuts, pecans, almonds, pistachios, dried cranberries, and balsamic vinegar.
  • Make it a meal: This salad can be served as a main course or a side dish. If you are serving it as a main course, add some grilled chicken, fish, or tofu.

Conclusion:

Roasted beet salad is a delicious and healthy dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its vibrant colors and flavors, this salad is sure to impress your guests.
