Time 1h15m

Number Of Ingredients 11

6 medium (2 lbs beets)
5 oz 6 cups baby arugula, rinsed and spun dry
4 oz or 1/2 cup feta cheese (diced or crumbled)
1/2 cup pecans (toasted)
1/2 cup dried cranberries
1/2 cup extra virgin olive oil
3 Tbsp balsamic vinegar
1 Tbsp dijon mustard (we love Grey Poupon brand)
1 garlic clove (pressed or finely minced)
1/4 tsp salt
1/8 tsp black pepper

Steps:

  • Preheat the oven to 400˚F. Line the bottom of a medium rimmed baking sheet with foil. Wrap each beet tightly in a sheet of foil and arrange lined baking sheet. Bake in preheated oven for 1 hour or until largest beet is easily pierced. Unwrap beets and cool to room temperature then peel the skins (see Pro Tip Below*) and slice into halves and then wedges.
  • Toast 1/2 cup pecans on a dry skillet, tossing frequently until golden and fragrant. Remove from heat and let cool.
  • Transfer arugula to a large mixing bowl then add remaining salad ingredients: sliced beets, feta cheese, toasted pecans and dried cranberries.
  • In a small mason jar, combine all dressing ingredients and shake well to combine. Drizzle over salad to taste. If not serving salad right away, shake the dressing again just before drizzling over salad.

Provided by Kelsey Nixon

Time 1h15m

Yield 6 servings

Number Of Ingredients 13

Roasted Beets
1 pound small beets, well-scrubbed (about 5)
1/4 cup sliced almonds, toasted
Vinaigrette
1/4 cup red wine vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon sugar
1/2 cup olive oil
Salad
1 large pear
3 cups mesculin greens
2 ounces goat cheese

Steps:

  • Place a rack in the center of the oven and preheat the oven to 425 degree F.
  • For the roasted beets: Place the beets in a sheet of foil and place another sheet on top and create a seal around the beet. Roast the beets on a baking sheet until tender, 45 minutes to 1 hour. Cool the beets in their foil packet for a few minutes, and then rub off the skins using a paring knife if needed. The beets need to still be a little warm to be able to remove the skins easily.
  • While the beets are roasting, toast the almonds in a small skillet over moderate heat, stirring occasionally, until golden brown. Remove and cool.
  • For the vinaigrette: Make the vinaigrette by stirring together the vinegar, mustard, salt and sugar, and then slowly whisk in the olive oil until emulsified.
  • Slice the cooled and peeled beets into 1/4-inch thick slices and add half the vinaigrette, tossing to coat completely. Toss the remaining vinaigrette with the salad greens.
  • Quarter and core the pear and slice it into julienne strips, about 1/8-inch thick.
  • Arrange the dressed greens, and beets on a platter and top with the pear, toasted nuts, and goat cheese.

6 medium beets, scrubbed (3 lbs.)
3/4 cup chopped walnuts (scant 4 oz.) or 3/4 cup pecans (scant 4 oz.)
4 bunches fresh arugula
1/4 cup cider vinegar
1 tablespoon Dijon mustard
1 tablespoon thawed frozen apple juice concentrate
1/3 cup finely chopped shallot (2 medium)
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1/3 cup vegetable oil

Steps:

  • Preheat oven to 400°F Line baking sheet with parchment or foil. Pierce beets with a skewer or fork. Place on prepared baking sheet and roast until tender when pierced with tip of sharp knife, 1 1/4 to 1 1/2 hours. Set aside to cool slightly. Keep oven on.
  • Spread nuts in small baking pan and bake until fragrant, 5 to 10 minutes. Let cool; chop coarsely if necessary. Trim, rinse and dry arugula, then tear into bite-size pieces.

Tips:

  • Selecting the Right Beets: Choose deep-colored beets that are firm and free from blemishes. Smaller beets tend to be more tender and flavorful.
  • Roasting Beets: To ensure even cooking, trim the beet greens, leaving about 1 inch of the stem intact. Drizzle the beets with olive oil, wrap them individually in foil, and roast at 400°F for 45-60 minutes, or until tender when pierced with a fork.
  • Slicing Techniques: For a visually appealing presentation, use a mandoline or sharp knife to thinly slice the roasted beets and pears. This will help them marinate better in the vinaigrette.
  • Making the Hazelnut Vinaigrette: To achieve a smooth and flavorful dressing, toast the hazelnuts in a pan until fragrant and golden brown. Then, combine them with Dijon mustard, honey, red wine vinegar, and olive oil in a food processor or blender until well blended.
  • Arugula Selection: Opt for fresh, tender arugula leaves for a peppery and slightly bitter flavor. Avoid wilted or discolored leaves.

Conclusion:

This Roasted Beet, Pear, and Arugula Salad with Hazelnut Vinaigrette is a delightful combination of earthy, sweet, and tangy flavors. The roasted beets and pears provide natural sweetness, while the arugula adds a peppery contrast. The hazelnut vinaigrette brings everything together with its creamy texture and nutty flavor. Serve this salad as a refreshing appetizer or a light main course, garnished with crumbled goat cheese or roasted pecans for an extra touch of richness and texture. With its vibrant colors and delicious taste, this salad is sure to impress your dinner guests or family members. Enjoy!
