Time 1h15m

Number Of Ingredients 7

20 baby beets, scrubbed
5 onions (a mix of red and white), cut into 3/4-inch wedges
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
3/4 cup 10-Minute Vinaigrette (balsamic vinegar variation), divided
2 teaspoons roughly chopped fresh oregano leaves, plus flowers for garnish (optional)
1 tablespoon roughly chopped fresh chervil leaves

Steps:

  • Preheat oven to 375 degrees. Wrap beets in parchment-lined foil. Roast until tender, about 1 hour. Meanwhile, drizzle onions with oil, tossing to coat. Season with salt and pepper. BALSAMIC ROASTED BEET SALAD

Provided by Ina Garten

Time 1h20m

Yield 6 servings

Number Of Ingredients 8

8 medium-size beets, tops removed and scrubbed
1/2 cup balsamic vinegar
1/2 cup good olive oil
2 teaspoons Dijon mustard, such as Grey Poupon
Kosher salt and freshly ground black pepper
4 ounces baby arugula
1/3 cup roasted, salted Marcona almonds, toasted
4 ounces soft goat cheese, such as Montrachet, crumbled

Steps:

  • Preheat the oven to 400 degrees.
  • Wrap the beets individually in aluminum foil and place them on a sheet pan. Roast them for 50 minutes to 1 hour, depending on their size, until a small sharp knife inserted in the middle indicates that they are tender. Unwrap each beet and set aside for 10 minutes, until cool enough to handle. Peel the beets with a small, sharp knife over a piece of parchment paper to prevent staining your cutting board.
  • Meanwhile, whisk together the vinegar, olive oil, mustard, 2 teaspoons salt, and 1 teaspoon pepper and set aside. While the beets are still warm, cut each one in half and then each half into 4 to 6 wedges and place them in a large mixing bowl. As you're cutting the beets, toss them with half of the vinaigrette (warm beets absorb more vinaigrette), 1 teaspoon salt, and 1/4 teaspoon pepper. Taste for seasonings.
  • Place the arugula in a separate bowl and toss it with enough vinaigrette to moisten. Put the arugula on a serving platter and then arrange the beets, almonds, and goat cheese on top. Drizzle with additional vinaigrette, if desired, sprinkle with salt and pepper, and serve warm or at room temperature.

BEET, ORANGE AND ARUGULA SALAD

Beet, Orange and Arugula Salad image

The oranges in this sweet and pungent salad will look like blood oranges after they sit for a little while with the beets. This makes a pretty Christmas salad. Try to find the wispy wild arugula, which is more pungent than regular arugula.

Tips:

  • Choose firm, deep-colored beets. Avoid beets that are soft, bruised, or have blemishes.
  • Roast the beets until they are tender. The roasting process brings out the sweetness of the beets and caramelizes the edges.
  • Use a variety of oranges. Blood oranges, navel oranges, and Valencia oranges all have different flavors and textures. Using a mix of oranges will add complexity to the salad.
  • Slice the oranges thinly. This will help them to absorb the dressing and make them easier to eat.
  • Use a good quality olive oil. The olive oil is the base of the dressing, so it's important to use a good one. Look for an olive oil that is extra virgin and has a fruity flavor.
  • Add the dressing to the salad just before serving. This will help to prevent the salad from getting watery.

Conclusion:

This roasted beet, onion, and orange salad is a delicious and healthy side dish that is perfect for any occasion. The roasted beets are sweet and caramelized, the oranges are juicy and tart, and the onions add a bit of crunch. The dressing is light and flavorful, and it brings all of the flavors together perfectly. This salad is sure to be a hit with your family and friends!
