BEET JAM

Provided by Juliesmom

Categories     Lunch/Snacks

Time 1h10m

Yield 3 quarts

Number Of Ingredients 5

4 lbs beets
3 lbs sugar
2 ounces fresh gingerroot, finely grated or sliced
3 lemons, juice and grated rind
1/2 lb almonds or 1/2 lb walnuts, chopped

Steps:

  • Wash and peel the beets.
  • Put them through a meat grinder or grate them.
  • In a pot, barely cover them with water and cook them slowly until they are tender.
  • Add the sugar, the ginger, the lemon juice and rind.
  • Cook until thick and clear, which will take about an hour.
  • Add the chopped nuts.
  • Makes about 3 quarts.

Tips:

  • Choose the right beets: Look for firm, deep-colored beets with no blemishes. Smaller beets are generally more tender and flavorful than larger beets.
  • Roast the beets properly: Roasting the beets brings out their natural sweetness and caramelizes them slightly. Roast the beets at a high temperature (425°F) until they are tender when pierced with a knife.
  • Use a good quality balsamic vinegar: The balsamic vinegar is a key ingredient in this jam, so it's important to use a good quality one. Look for a balsamic vinegar that is aged for at least 12 years.
  • Don't overcook the jam: The jam should be cooked until it has thickened and reached a spreadable consistency. Overcooking the jam will make it too thick and syrupy.

Conclusion:

Roasted beet jam is a delicious and versatile condiment that can be used in a variety of ways. It's perfect for spreading on toast, sandwiches, or crackers. It can also be used as a glaze for chicken, pork, or salmon. And it's also great as a dipping sauce for vegetables or fruit. No matter how you choose to use it, roasted beet jam is sure to be a hit.
