Categories     Side Dish

Time 15m

Number Of Ingredients 12

1 large bunch (about 1 pound) fresh asparagus
1 to 2 teaspoons olive oil
Salt, to taste
Freshly ground black pepper, to taste
Zest and juice of 1/2 medium lemon, preferably organic
Lemon wedges, from the remaining 1/2 lemon
Sprinkle of finely grated Parmesan cheese
Small handful of fresh mint or parsley, finely chopped
Light sprinkle of red pepper flakes
Pat or two of butter
Light drizzle of balsamic reduction or thick balsamic vinegar
Toasted sliced almonds

Steps:

  • Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy cleanup. Snap off the woody ends of the asparagus (if you sharply bend the asparagus near the base, it will snap in the right place). Discard the ends.
  • Place the asparagus on the sheet and drizzle with 1 to 2 teaspoons olive oil, just enough to lightly coat the asparagus. Sprinkle salt and pepper over the asparagus, and toss until the spears are lightly coated in oil. Arrange the spears in a single layer on the pan.
  • Bake just until the base of the asparagus is easily pierced through by a fork. Very thin asparagus, like the kind shown here, will take as little as 9 to 12 minutes, whereas thicker asparagus will need 15 to 20 minutes.
  • Transfer the roasted asparagus to a serving platter and season however you'd like. You could keep it simple with a squeeze of lemon juice, or a sprinkle of Parmesan, or add a pat of butter or drizzle of balsamic vinegar.
  • Roasted asparagus is best served when it's fresh out of the oven, but it will keep at room temperature for up to 1 hour or up to 4 days in the refrigerator (gently reheat before serving).

THE BEST ROASTED ASPARAGUS

The Best Roasted Asparagus image

The perfect roasted asparagus should be lightly browned and tender, yet bright green and crisp. Roasting the spears at a high temperature helps achieve this. We also browned grated Parmesan to make a nutty, crumbly frico topping. Wait until ready to serve to top the vegetables so the crisped cheese stays crunchy.

Time 20m

Yield 6 servings

Number Of Ingredients 6

1 pound thin asparagus, trimmed
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 cup freshly grated Parmesan cheese (about 1 1/2 ounces)
1 teaspoon finely grated lemon zest
Juice of 1/4 lemon

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with a wire rack.
  • Put the asparagus, olive oil, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a medium bowl. Toss to coat evenly. Spread the asparagus in a single layer on the prepared baking sheet. Roast for 10 to 12 minutes, until lightly browned and tender, but still bright green.
  • Meanwhile, spread the Parmesan evenly in the bottom of a medium nonstick skillet over medium heat. Cook undisturbed until the cheese melts, sticks together and turns golden brown, about 2 minutes, then flip with a rubber spatula and cook until golden on the second side, about 2 minutes more. Transfer the frico to a wire rack-lined baking sheet to cool completely, about 2 minutes. Break the frico into small crumbles and put in a small bowl. Add the lemon zest and 1/2 teaspoon black pepper and toss to combine.
  • Transfer the roasted asparagus to a serving platter and squeeze the fresh lemon juice over the top. Top with the crumbled frico mixture.

ASPARAGUS WITH BROWN BUTTER

Asparagus With Brown Butter image

Writing in 1991, Jacques Pépin talked of his love of asparagus, stemming back to his childhood in France. His approach to the vegetable is as uncomplicated as it gets. "It is best when cooked in just enough water to steam it," he wrote. "It is ready - tender but still a bit firm to the bite - after a few minutes." Topped with a brown butter sauce, it's a perfect accompaniment to meat, poultry or fish, but also just as at home with some white rice, part of a simple weeknight meal.

Time 30m

Yield 6 servings

Number Of Ingredients 6

2 dozen large asparagus stalks with tight, firm tips (about 1 1/2 pounds; 4 per person)
1/2 cup water
6 tablespoons unsalted butter
1/2 teaspoon salt
3/4 teaspoon freshly ground black pepper
2 tablespoons finely chopped parsley

Steps:

  • Peel the lower part (root end) of the asparagus stalks with a vegetable peeler.
  • In a large nonreactive saucepan, bring the water to a boil. Add the asparagus in one layer, cover and cook over high heat for about 6 minutes, to the desired tenderness. Lift asparagus from the water (most of it should have evaporated) and arrange on a platter.
  • Meanwhile, heat the butter in a skillet until it is lightly browned and stops smoking. Sprinkle the asparagus with the salt and pepper, and pour the hot butter over it. Garnish with parsley, and serve immediately.

ROASTED ASPARAGUS WITH BROWN BUTTER AND PECORINO

Roasted Asparagus with Brown Butter and Pecorino image

Make and share this Roasted Asparagus with Brown Butter and Pecorino recipe from Food.com.

Provided by PaulaG

Categories     Vegetable

Time 25m

Yield 6 serving(s)

Number Of Ingredients 5

2 tablespoons unsalted butter
2 lbs medium-thick asparagus
1/2 teaspoon kosher salt
2 ounces chunk pecorino romano cheese
fresh ground black pepper

Steps:

  • Preheat oven to 425 degrees.
  • To make brown butter, melt the butter in a small saucepan over medium-low heat.
  • Skim off the white foam as it rises to the top.
  • Continue cooking until the butter is medium brown and smells like roasted nuts.
  • Snap the ends from the asparagus — they'll break at the point of tenderness.
  • Or slice the ends off closer to the root end and peel spears with a swivel-bladed vegetable peeler.
  • Rinse, then soak for a few minutes in a couple of changes of cold, lightly salted water.
  • Agitate lightly to release grit that may be trapped.
  • Rinse well again and pat with paper towels.
  • Brush a shallow baking dish or jelly-roll pan large enough to hold the asparagus in a single layer with a film of brown butter.
  • Spread asparagus in dish and brush with the remaining butter.
  • Roast until tender, about 15 minutes.
  • Shave or grate the cheese over the asparagus, sprinkle with pepper and serve warm.

Tips:

  • Choose the right asparagus. Look for spears that are bright green, firm, and have tight tips. Avoid spears that are limp, woody, or have yellow or brown spots.
  • Trim the asparagus properly. Snap off the tough, woody ends of the asparagus spears. You can also use a sharp knife to cut off the ends.
  • Roast the asparagus at a high temperature. This will help to caramelize the asparagus and give it a slightly crispy texture.
  • Use good quality butter. Brown butter is made by cooking butter until it turns a light brown color and has a nutty flavor. You can use unsalted or salted butter, but unsalted butter will give you more control over the flavor.
  • Garnish the asparagus with fresh herbs or lemon zest. This will add a pop of color and flavor to the dish.

Conclusion:

Roasted asparagus with brown butter and pecorino is a simple but delicious dish that is perfect for any occasion. It is easy to make and can be ready in under 30 minutes. The asparagus is roasted until tender and slightly crispy, and the brown butter and pecorino add a rich and nutty flavor. This dish is a great way to enjoy fresh asparagus and is sure to please everyone at your table.
