Time 40m

Yield 8 servings

Number Of Ingredients 6

Unsalted butter, for baking dish
1 large bunch asparagus, about 1 1/2 pounds, trimmed to even lengths and blanched for 4 minutes in boiling, salted water
Gray salt and freshly ground pepper
Seasoned bread crumbs, recipe follows
8 thin slices prosciutto
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Butter a shallow baking dish that is long enough to hold the asparagus. Season the asparagus with salt and pepper, to taste.
  • Divide the asparagus into 8 equal bundles. Arrange 2 slices of the prosciutto on a work surface so they slightly overlap each other. Place an asparagus bundle on top and roll up carefully in the prosciutto. Arrange in the prepared baking dish. Flatten the top of each bundle slightly and sprinkle with 1/4 of the seasoned bread crumbs. Drizzle with the olive oil.
  • Roast in the oven until heated through and crisp, about 10 minutes. Serve at once on a platter with the sliced ham.
  • 1 1/2 teaspoons extra-virgin olive oil
  • 2 cloves minced garlic
  • 1/4 cup fine dried bread crumbs
  • Pinch gray salt
  • Freshly ground pepper
  • 1 tablespoon finely chopped fresh parsley leaves
  • 1 teaspoon freshly grated lemon zest
  • 1 tablespoon freshly grated Parmesan
  • To make the seasoned bread crumbs, heat the olive oil in a small skillet over medium-high heat until hot. Tilt the pan and then add the minced garlic and saute briefly until pale gold. Add the bread crumbs, season with salt and pepper, and lower the heat to medium. Cook, stirring occasionally, until the bread crumbs are toasted, about 3 minutes. Pour into a small bowl and add the parsley, lemon zest, and Parmesan. Toss well. (The crumbs keep, tightly sealed and refrigerated, for several days.)

ROASTED ASPARAGUS BUNDLES

A very pretty way to serve asparagus! NOTE: The directions state that you should roast for 25-30 minutes, although I have found that it takes much less time at that temperature, especially since we prefer our asparagus crisp-tender. I strongly suggest you begin checking your asparagus after only 10 minutes, especially if your spears aren't very thick.

ROASTED BACON-WRAPPED ASPARAGUS AND RED PEPPER BUNDLES RECIPE - (4.5/5)

Roasted Bacon-Wrapped Asparagus and Red Pepper Bundles Recipe - (4.5/5) image

Provided by ahensnest

Number Of Ingredients 5

1 lb fresh young asparagus stalks
1 large red sweet pepper
1 lb hickory smoked bacon
2 Tbs extra virgin olive oil
fresh ground sea salt & pepper, to taste

Steps:

  • Preheat oven to 400 degrees. Line a sheet pan with parchment paper. Rinse asparagus and trim bottom ½" from stalks. Cut red pepper into 8 slices, lengthwise. Separate asparagus spears into bundles of two to three, place one pepper slice onto each. Starting from bottom, wrap a piece of bacon tightly around spears and pepper, ending about halfway, add another slice and continue wrapping, leaving tip of spears visible. Repeat with remaining bundles. Place on parchment lined sheet, so they are not touching. Drizzle olive oil over bundles and sprinkle with sea salt and pepper to taste. Bake in preheated oven about 15 minutes, then turn on broiler and broil for 5, or until bacon is as crisp as you like. Serve warm.

Tips:

  • Choose fresh, tender asparagus with tightly closed tips. Avoid spears that are limp or woody.
  • Roast the asparagus in a hot oven to caramelize the sugars and bring out its natural sweetness.
  • Drizzle the asparagus with olive oil and season with salt and pepper before roasting. This will help to enhance the flavor of the asparagus.
  • Roast the asparagus in a single layer on a baking sheet. This will help to ensure that the asparagus cooks evenly.
  • Roast the asparagus for 10-12 minutes, or until it is tender-crisp. Overcooked asparagus will be mushy and lose its flavor.
  • Serve the roasted asparagus immediately. It can be enjoyed as a side dish or as part of a main course.

Conclusion:

Roasted asparagus bundles are a delicious and easy side dish that can be enjoyed year-round. With its vibrant green color and slightly sweet flavor, roasted asparagus is a welcome addition to any meal. Whether you are serving it as a side dish for a special occasion or as a quick and easy weeknight meal, roasted asparagus bundles are sure to please everyone at the table.
