ROAST SKATE WITH MALTED, CARAMELIZED GARLIC SAUCE

Roast Skate With Malted, Caramelized Garlic Sauce image

Skate is a lovely ray type fish. This is a quick simple way to prepare it that comes out very tasty and looks very nice plated up. Since Skate's something not everyone knows how to make you'll impress people. I read online that skate improves when left to stand refrigerated for a day or two. As it matures, the flesh becomes firmer and more palatable. When purchased, it has usually been aged slightly.

Yield 2 serving(s)

Number Of Ingredients 7

2 skate, wings
5 tablespoons olive oil
4 garlic cloves (2 tsp minced)
3 tablespoons malt vinegar
1 pinch of sweet smoked spanish paprika or 1 pinch plain paprika
sea salt
black pepper

Steps:

  • Preheat the oven to 425°F.
  • To make the sauce take a small saucepan and fry the garlic in 3 tbsp of olive oil until it is dark nutty brown in colour.
  • Add the vinegar and a pinch of paprika.
  • Bring to the boil and reduce by half.
  • Season well with salt & pepper and remove from heat.
  • Drizzle the remaining olive oil into the pan to cover the bottom of large oven safe pan and heat on the stove top until very hot (I like to use cast iron).
  • Season the skate with salt & pepper on both sides.
  • Turn off the heat and slide in the skate, being careful of oil splatter.
  • Put the skate into the oven for about 10 minutes or until cooked through.
  • Remove and serve immediately with the warmed sauce spooned over the fish and a sprinkling of paprika.
  • Note that you can make the sauce while you do the skate but you should start the sauce first (when you start preheating the oven would work well) since the garlic takes a while to caramelize without burning.

BAKED SKATE

Baked Skate image

Skate (or ray) is a delicious, yet underused, fish. The flesh is creamy white, with a texture all its own; it's not flaky like most fish, but comes apart in long shreds when cooked. Don't be put off by the cartilage, and don't try to remove it before cooking. After it's done, the flesh can easily be lifted off the fan-like skeleton. I like this served with a colorful mix of sauteed vegetables and pasta.

1 lemon
2 tablespoons panko bread crumbs
1 tablespoon salted butter, melted
1 ½ pounds skate wings, unfilleted

4 lemon slices
4 sprigs fresh dill

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.

ROASTED CARAMELIZED GARLIC

I find there is nothing better then roasted garlic and I have found dozens of ways to use it

Time 55m

Number Of Ingredients 1

1 head of garlic

Steps:

  • 1. There are many ways to roast garlic, this is what I do. Set oven to 350 I use my toaster oven
  • 2. I try to rub off as much as the white paper that covers each clove as it will stick like crazy to the garlic when done. A few times I have removed the garlic from the shells for me it was such a waist of time and each time I have done this so much of the garlic has burned, and with out doing the smash the clove trick its so time consuming.
  • 3. You can cut the top of the garlic off some will give it a splash of olive oil when its cut some will not. which ever you choose just wrap the head of garlic in foil and check on it from time to time with a squeeze, if you find it is tender then give it a look. you want just like the caramelized onions to be a dark gooey brown the photo shown could in my would be cooked longer.
  • 4. When it is color you want take it out and please let it cool getting that sticky hot garlic on your fingers you only want to do once. pull the cloves apart and give each clove a squeeze or just grab the entire head and squeeze the heck out of it, I do this on plastic wrap because this is how I will store it.
  • 5. I will freeze the roasted garlic when I do a full bag of it. It can be mixed into soft butter tossed in mashed potatoes, sauces soups stews anything use your imagination

Tips:

  • Choosing the Right Skate: Look for firm, plump skate wings with a mild, slightly sweet aroma. Avoid any fish with a strong fishy smell.
  • Proper Cleaning: Before cooking, thoroughly clean the skate wings. Remove the cartilage from the center of each wing and rinse them under cold water.
  • Brining for Flavor: To enhance the skate's natural flavor, consider brining it in a mixture of water, salt, sugar, and herbs for at least 30 minutes before cooking.
  • Achieving Crispy Skin: To achieve crispy skin, ensure that the skate wings are thoroughly dried before cooking. Additionally, searing them in a hot pan with a little oil helps create a golden-brown crust.
  • Perfecting the Malted Caramelized Garlic Sauce: To make the sauce, use a heavy-bottomed saucepan to prevent scorching. Cook the garlic slowly over medium heat until golden brown, then add the malt vinegar and reduce it until syrupy. Finally, whisk in the butter until emulsified.
  • Serving Suggestions: Enjoy the roasted skate with the malted caramelized garlic sauce as the main course. Serve it alongside roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.
