Roast Pork with Duck Sauce on Garlic Bread image

This was the specialty of the landmark "Crossroads" Pizzeria in South Fallsburg, N.Y. It's the place where Catskill Resort workers and guests, "up for the whole season," would go for pizza or roast pork sandwiches when they needed a break from the Jewish cooking at the Hotels. I make the garlic bread with pastrami seasoning.

Tips:

  • Choose the right cut of pork: Pork shoulder or pork loin are both good choices for roasting. Pork shoulder is a more affordable cut with a richer flavor, while pork loin is leaner and more tender.
  • Season the pork liberally: A good rub or marinade will help to add flavor to the pork. Use a combination of herbs, spices, and seasonings that you enjoy.
  • Roast the pork slowly: Roasting the pork slowly will help to ensure that it is cooked evenly and tender. Cook the pork at a low temperature (around 300 degrees Fahrenheit) for several hours, or until the internal temperature reaches 145 degrees Fahrenheit.
  • Make a flavorful sauce: A flavorful sauce will help to complement the pork. The garlic caper sauce in this recipe is a great option, but you can also try other sauces, such as a red wine sauce or a Dijon mustard sauce.
  • Let the pork rest before serving: Letting the pork rest for a few minutes before serving will help to ensure that the juices redistribute throughout the meat. This will make the pork more tender and flavorful.

Conclusion:

Roast pork with garlic caper sauce is a delicious and easy-to-make dish that is perfect for any occasion. The combination of the tender pork, the flavorful sauce, and the crispy roasted potatoes is sure to please everyone at your table. So next time you're looking for a simple but impressive meal, give this recipe a try.
